Potato and meat croquettes: ポテトコロッケ

Fried food again, haha, I know that, but how can I stop eating something I like.

If you love fried food, I think you love the korokke (ポテトコロッケ) too, the contrast between, delicious golden crumbs outside and soft mashed potatoes inside is perfect. This time I make Potato and meat croquettes, made from mashed potatoes and cooked minced meat. Actually I want to try new method for cooking potatoes, I read that you can cook it in the microwave and it seen to be easy. But you need to calculate the cooking time, for 100g of the potatoes, you will need 2 minutes in the microwave.  I found it easy and less messy, ^^, no need to boil the water or drain the potatoes. The only down side is you need to be careful as the potatoes will be very hot when coming out of the microwave, let it cool a bit before peeling it (or you will burn your finger like me -*-). Next time for my fried food mission, haha, I think about making cream korokke, and it will be soon ^^.
You can use any kinds of meat that you like, for me I use minced pork (my brother like pork).

Serve 2

500g ............................... Potatoes
100g ............................... Minced meat
1/2 .................................. Onion, finely chopped
1tbsp ............................... Butter
1/2tsp .............................. Salt
......................................... Nutmeg, ground pepper
......................................... Plain flour, beaten egg and bread crumb for covering the croquettes
......................................... Oil for frying
......................................... Tonkatsu (とんかつ) sauce for serving

Put the butter into a frying pan over low heat, and fry the onion until fragrance.
Put the meat into the pan, stir then season with nutmeg, ground pepper and salt, stir until fully cooked. Set aside.
Warp the potato with the plastic warp, and heat in a microwave at 600w, cook for 10 minutes(you need 2 minutes for 100g of potatoes, so 500g, you will have to cook for 10 minutes).
If you don't want to use microwave, peel the potatoes and cut into pieces, then boil it until fully cook.
If using the microwave, remove the plastic warp and peel the potatoes skin.
and mash the potatoes.
Mix the cooked meat with mashed potato, then form into oval patties.
Roll in flour, shaking off excess, dip in beaten egg, then roll in breadcrumbs to coat. Fry the Potato croquettes until golden brown on both sides. Drain on paper towels.
Place the Potato croquettes on a plate, drizzle Tonkatsu sauce on top and serve with salad.

  1. I love croquettes, but hate the frying part. How I wish I can have one right now!
