February 2011 Daring Bakers’ Challenge # 49: Panna Cotta with Raspberry Gelée and Nestle Florentine Cookies

Simple dessert that many people love ^^, I must say that, because Panna Cotta is such an easy thing to make. You don't need any special equipment, just a saucepan and a refrigerator (I believe that we have it, haha).

Coffee Macarons with Caramel Coffee Ganache: Less sweet more delicious macarons

I think the taste of the macaron that everyone will talk about after the first bite is its sweetness, for me it's the reason why I don't make it often. But trying to adjust the recipe is not easy, baking is a science, esp. the macaron.

Peanut butter blossom cookies: Peanut butter and chocolate Kisses, don't you think it's so cute?

There are many reason for me to make this cookie, first I have a lot of Hershey’s Chocolate Kisses that I bought when I went to supermarket (haha, like I tell you, I just can't stop buying it even thought I can't eat them all), and second it contains peanut butter and third it's cute ^^.

Chicken Farm Baker's Project # 31: My dream wedding Cake; baked and frosted my dreams, Traditional Fruitcake Wedding Cake

My dream wedding Cake; baked and frosted my dreams, Traditional Fruitcake Wedding Cake, I know that it's such  a long name, haha. Anyway for this month a month of Love and Love, we will go on dreaming.

How to make Fondant Rose

Fondant rose is very easy to make, and can be used in many occasion, ^^. You can use marzipan or molding chocolate too.

Macerated Dried Fruit Mix

For the dried fruits you can use4 pounds of your favorite dried fruits, anything that you like, but don't forget to cut them into the same size. And for the fruits I let it stand for 1 week before using it

ROLLED FONDANT

I make the fondant myself. Well, if you can buy it'll more elastic than the homemade one but this one is easy to make and it's smell so good. I tasted it and I think it's great, not that it's delicious (the main ingredient is sugar, so it tasted like sugar, haha), but you can really eat it without feeling wried, ^ ^.

Grand Marnier Orange Chocolate Bonbons: Hand make chocolate that means I love and care for you.

I know that I fall in love with chocolate a long time ago, it's so charming, everything about it, flavor, smell, texture or even the bad temper of it ^^. I think the chocolate is bad temper because it reacts real soon to the temperature, like the people when can't resist anything that change so fast, like me, haha.

Valentine chocolate strawberry cupcake with Strawberry Mascapone frosting: Let's make baking more fun!!

I really love all the simple chocolate and candy bars , Kitkat, HERSHEY'S!, Mars and many things that you can find in the supermarket shelf, I always have them on my counter. I love to use them in my bake goods too, because people welcome them. Well we have to accept the truth that we don't need anything complex to make people smile, like me, I love the extra cocoa mass chocolate, but a bar of Milo (the chocolate lookalike, haha), still make me happy too.

I got this recipe from ........................
It can be used in many kind of recipe, instead of plain sponge cake or as a light butter cake. For the fat part, if you want the cake to be softer use all oil instead half oil half butter.
I adapt the recipe to be smaller, so you don't have to worried about the leftover (but it's delicious, I know that you don't mind to eat its crumbs ^^).

Yellow sponge cake
40g .................................. Cake flour
30g .................................. Cornstarch
2 ...................................... Large eggs
2 ...................................... Egg yolks
65g .................................. Sugar
½tsp ................................. Coarse salt
½tbsp ............................... Vanilla extract
¼cup ................................. Vegetable oil
¼cup ................................. Melted butter (warm)

Preheat the oven to 375°F or 190°C.
Sift the flour and Cornstarch together, set aside.
Line 25x25cm baking pan with baking paper.
Mix melted butter with vegetable oil.

Beat the eggs, egg yolks, sugar and salt until very thick and pale (thick ribbon).
Add the vanilla and beat to combine.
Pour the sifted flour into the egg mixture, fold to combine.
Pour the melted butter mixture (drizzling, if possible) into the batter and fold to combine.
Pour the mixture into prepared pan.

Bake for 18 minutes or until golden and spring when touch lightly.
Remove the cake from the pan and let it cool on a wire rack.
