The chocolate is a must for some people on Valentine's day, but for me it's a must for everyday, haha. But as I say February is a month of love, so I'm still in the love mode, ^^. And when my sister came home with strawberries, she said that "I think about you when I saw these", what a lovely sister (I thought) and followed by another sentence "I want to have them in a cake with a lot of buttercream and you can do anything about the rest" ok, I got it -*- . I make one cake for her and use the rest of the strawberries the way I want, but it's not much left, I just have to use it wisely.
So, I think about the chocolate and strawberry cupcake that I want to make, and what they will be if I put a lot of chocolate and candy bars on top, I know it will be lovely and delicious.
I make big cupcake, and frost it with pink strawberry cream, and I have a bit of cookie dough left in my fridge so I turn them into small heart and decorate it with red and with royal icing.
But don't let anything hold you back, you can use all the things that you like, and if you think that the high cocoa mass chocolate is suitable to your taste just use it. I love the imagination, and the freedom that I get when I bake something by myself, well, I put all the thing that I like in and be happy with it. So don't forget how fun it is ^^, the point is you will make yourself happy and the people around you will be happy too.
And I know that you want to bake this cute chocolate cake not, so let's go in to the kitchen and bake something to make yourself happy.
Valentine chocolate strawberry cupcake
with Strawberry Mascapone frosting
Make 14 standard cupcake or 7 large cupcake
Chocolate Strawberry Cupcakes
100g ............................... Unsalted butter
160g ............................... Granulated sugar
2 ..................................... Egg
......................................... A pinch of salt
150g ............................... Cake flour
40g ................................. Cocoa powder
2tsp ................................ Baking powder
160g ............................... Crème Fraîche
1tsp ................................ Chocolate extract
......................................... Strawberry
Strawberry Mascapone frosting*
200ml ............................. Whipping cream
35g .................................. Sugar
50g .................................. Mascarpone cheese
½tbsp ............................. Lemon juice
1tsp .................................. Strawberry extract
........................................... Red food coloring
* You will need 2 batch of this frosting if you make 14 cupcakes.
Decoration
........................................... small chocolate bar, Kitkat or anything you think they're sweet enough ^^
Preheat the oven to 170 °C
Place the baking paper in to the cupcake tins.
Sift the flour, cocoa powder and baking powder together.
Beat the butter, salt and sugar until light and fluffy, add the chocolate extract and beat to combine.
Put the egg in to the batter and beat until combine.
Divide the flour mixture into 3, put 1/3 of the flour mixture into the batter, stir with a spatula, when combine, add half of the Crème Fraîche, follow with 1/3 of the flour, stir again then add the rest of the Crème Fraîche. Finish with the rest of the flour, mix to combine.
Scoop the batter into the tins, add the strawberry half in the center.
Bake for 20 minutes (for standard muffin cake) or 25-30 minutes (for large cupcake), or until the cake is spring when touch lightly.
Let the cake cool completely before frosting it.
Strawberry Mascapone frosting
Beat all the ingredient together and put the frosting into a piping bag.
Frost the cake with the frosting and decorate as you wish, ^ ^.

And I use Dairy whipping cream.

You can use cream cheese, but the amount will be less. About 35-40g will do and add more sugar about 10g, the cream will be good but will have a bit of tangy taste from cream cheese.

No, just omit it, it helps enhance the chocolate aroma without adding more chocolate.
