Peanut butter brownie


 It's February again, I feel like the time flies so quickly.

And when thinking about February, I can't stop thinking about CHOCOLATE!!!!

In my brain, the sequence is always like this "February-Valentine-Chocolate", haha. Anyway, there is no tradition that we must give chocolate on Valentine's Day in Thailand, but I think I was influenced by Japanese mangas, games, and animes.

But giving delicious chocolate (or other kinds of sweets) to the people that you love is always a great idea. 
And today, I come with a delicious chocolate-packed brownie, but not only the chocolate, it's filled with nutty peanut butter too.

I use 60% dark chocolate for this time because I don't want my brownie to have a bitter taste but if you want a more intense chocolate taste, you can use a higher percentage chocolate in this recipe too. 

The method is the same as other brownies but you will need to freeze half of the batter (after pouring it into the pan) before adding the peanut butter, so the brownie will be divided into three layers beautifully after baking. 

As I made a small recipe for eating in my family, I used a small loaf pan instead of the square pan and I found that it turned out lovely than before, haha. Anyway, if you want to make more the double recipe will require a 17x17 cm. pan, and the triple recipe require a 20 x20 cm. pan.


Peanut butter brownie
8x18x8 cm. loaf pan


65 g ............................. Unsalted butter
1/8 tsp .......................... Salt
50 g ............................. Dark Chocolate (A), chopped if large
50 g ............................. Granulated sugar
1/2 tsp .......................... Vanilla Extract
1  ................................... Egg
37 g ............................. All-purpose flour
50 g ............................. Dark Chocolate (B), chopped if large
140 g ............................ Peanut butter (chunk)


Preheat the oven to 180℃.
Line 8x18x8 cm. loaf pan with baking paper.

Put the butter, chocolate(A), and salt into a bowl.

Warm in the microwave at 600w for 2 minutes.


Stir until smooth.

Add the sugar and vanilla extract and stir to combine. Let the mixture cool for 10 minutes.

Put the egg into the bowl and stir until fully combined.

Sift the flour into the bowl.

Stir until fully combined.

Add the chocolate (B) into the bowl and mix to combine.


Pour half of the batter into the prepared pan. 

Put the pan in the freezer and freeze for 15 minutes.

Meanwhile, warm the peanut butter in the microwave (600w) for 20-30 seconds.

Pour the peanut butter over the hardened brownie batter.

Then pour the rest of the brownie batter over the peanut butter.

Bake for 25-30 minutes in the preheated oven.


Let the brownie cool completely before removing it from the pan.
