White chocolate cashew nut cookies

Cookies again, haha.


I think that I have more than 100++ cookie recipes in my blog right now because I bake it almost every week.
There are thousands (and thousands) of cookie variations, with white chocolate, dark chocolate, coffee, tea, and etc. And because baking is a science, you can create a different taste and texture of cookies from the same list of ingredients by adjusting the quantity.  
As you can see from today's recipe, this cookie is not a cakey kind, with a lot of sugar the cookie is on the crispy side. Lately, I love using cashew nuts and white chocolate together, I think this combination is very delicious. For the cashew nuts, you can use the salted one, and you will have a choice to add or omit the salt to the butter, as salt+white chocolate+ nuts equal yummy for many people (including me!) 


White chocolate cashew nut cookies
Makes 17-18 pieces


140 g .................................. Unsalted butter
........................................... Pinch of salt
1/2 tsp ............................... Vanilla extract
140 g .................................. Brown sugar
110 g ................................... Granulated sugar
1 ......................................... Egg
250 g .................................. All-purpose flour
3/4 tsp ............................... Baking soda
1 tsp ................................... Baking powder
90 g .................................... Cashew nuts (roasted and chopped) 
90 g .................................... White chocolate, chopped if large



Preheat an oven t0  180℃ 
Line baking sheets with baking paper.

Put the butter, salt, and vanilla extract into a bowl. Beat until smooth. Put both kinds of sugar into the bowl, and beat to combine.


Put the egg into the bowl, mix to combine.


Sift the flour, baking powder, and baking soda into the bowl.

Put the white chocolate and cashew nuts into the bowl.

Fold to combine.

Use a 5.5 cm scoop to scoop the cookie dough onto the prepared baking sheets. You will get about 17-18 pieces.

Bake in the preheated oven for 12-14 minutes.

Remove from the oven and let it cool completely on the baking sheet.

The cookie will become firm when cool.
