Sticky rice with Black Bean in coconut milk

This easy Thai dessert is one of my favorite dessert. 

Actually, it came from the fact that my grandmother loved to eat it, so she always bought it and I always enjoyed it with her. 

It's a combination of Black Bean in Coconut Milk and Sticky rice with coconut milk, that both of them are not hard to make, esp. when you have a microwave. As the recipe for Sticky rice with coconut milk is the recipe that I developed it a long time ago, when I just got my new microwave, haha. Not only that you can use it in this recipe, but you can also serve this Sticky rice with coconut milk with mango to make one of the most famous Mango sticky rice too.

For Black Bean in Coconut Milk, you need to boil the bean until really soft before boiling it in the coconut milk, because when boiling with the sugar, the sugar will tighten the beans, and it won't become softer.

Sticky rice with Black Bean in coconut milk


Black Bean in Coconut Milk
150 g ..................... Black beans
1/2 tsp .................. Baking soda
600 ml ................. Coconut milk
1/8 tsp ................. Salt
60 g ..................... Granulated sugar
65 g ...................... Palm sugar

Sticky rice with coconut milk
200 ml ................... Thai sticky rice
60 ml .................... Water
60 ml ...................... Coconut milk (A)
30 ml ...................... Coconut milk (B)
50 g ......................... Granulated sugar
1 tsp ......................... Salt

Coconut milk topping
100 ml ..................... Coconut milk
1 tsp ......................... Cornstarch
1/4 tsp ..................... Salt



I use Thai sticky rice.

Put the black beans in a large bowl and add enough cold water to cover them by at least 3 cm. Let soak overnight.


Wash the rice.

 
Drain the rice.


Pour hot water (90-100℃) over the rice (about 3 cm above the rice).
Soak the rice for 3 hours.


Drain the soaked black beans.


Put the soaked black beans in a medium pan, pour water into the pan.


Place over medium heat, bring to boil.
Let it boil for 5 minutes, skim off the foam.


Pour the baking soda into the pan (the mixture will bubble up).
Skim it thoroughly.
Simmering for 50-60 minutes.


Or until the black beans become soft.


Drain the cooked black beans. 


Put the coconut milk into a pan, and place over medium heat, and bring to boil.
Pour the cooked black beans into the pan.


Put the salt, sugar, and palm sugar into the pan. 


Cook until all the sugar melts, then remove from the heat.


Drain the soaked sticky rice.

 
Put the soaked sticky rice into a microwaveable bowl, pour the water and coconut milk (A) into the bowl.



Cover and heat in a microwave  (600W) for 10 minutes.


Mix the coconut milk (B) with sugar and salt then heat in a microwave  (600W) for 20 seconds.

  
When the sticky rice is ready, remove the sticky rice from the microwave, and pour the coconut milk mixture over the rice.


Mix to combine. Cover and leave for 15 minutes.


Sticky rice with coconut milk is ready.


Coconut milk topping:
Mix the coconut milk with cornstarch and salt and heat in a microwave  (600W) for 30 seconds.
Remove from the microwave, mix to combine.
Heat in the microwave  (600W) for 30 seconds more.
Remove from the microwave, mix to combine.


Put the Sticky rice with coconut milk into a bowl, and pour the Black Bean in Coconut Milk over the rice.


Drizzle the Coconut milk topping over the rice, and enjoy!
