Purple sweet potato and Green tea Pound cake

Today, our cake has two colors.

The green part of the cake is green tea, and the purple part is purple sweet potato (using purple sweet potato powder).

The reason for making this cake was simple ^^ because I wanted to use the purple sweet potato powder that I keep it for a long time in the freezer, haha. Anyway, I didn't want to make something complicated.
Turning it into a pound cake is the best way (for me) because my family members love to eat this kind of cake very much.
But only sweet potato will make the cake purple, not cute enough, and a bit boring hehe. 
When coming with green tea, the bitterness taste of the green tea goes very well with the sweetness from the sweet potato, and yes, the color is more lovely too.

There are many pound cake recipes, for this one, the main ingredients (egg, butter, sugar, and flour) are almost the same weight. With only a small amount of the baking powder and liquid, the cake comes out very moist and dense. Serve a thin slice of this cake with a cup of hot tea or black coffee is the best for me.


Purple sweet potato and Green tea Poundcake

Makes 18 x 8 cm. Pan


Purple sweet potato cake

25 g ...................... Cake flour

20 g ..................... Purple sweet potato powder

1/4 tsp ................. Baking powder

50 g ...................... Unsalted butter

.............................. Pinch of salt

50 g ....................... Granulated sugar

1 ............................. Egg

1 tbsp ..................... Milk

Green tea cake

35 g ....................... Cake flour

10 g ....................... Green tea powder

1/4 tsp ................... Baking powder

50 g ....................... Unsalted butter

............................... Pinch of salt

50 g ....................... Granulated sugar

1 ............................. Egg

1 tbsp ..................... Milk



Preheat an oven to 170℃

Line a 18 x 8 cm. Pan with baking paper.

Sift the cake flour together with purple sweet potato powder and baking powder, and set aside.


Beat the butter with salt until smooth.

Add the sugar, and beat until light in color.

Add the egg, and beat until fully combined.


Pour the sifted flour mixture into the bowl.

Fold to combine.


Pour the milk into the bowl. 


Fold to combine.


Pour the batter into the prepared pan, smooth the top, and set aside.


Sift the cake flour together with green tea powder and baking powder, and set aside.


Beat the butter with salt until smooth.

Add the sugar, and beat until light in color.

Add the egg, and beat until fully combined.

Pour the sifted flour mixture into the bowl.

Fold to combine.

Pour the milk into the bowl. 


Fold to combine.


Pour the batter into the prepared pan.


Smooth the top.

Bake in 170℃  Preheated oven for 40-50 minutes.

Let it cool in the pan for 10 minutes.

Remove from the pan and let it cool completely.
