Sweet Sticky Rice with Coconut Milk Topping: ข้าวเหนียวหน้านวล

You can't have too much sweetness in your life ^^ (well, as long as you can moderate it, haha).



Don't you know that there are many kinds of Thai dessert that you can make at home without requiring special ingredients or equipments. Most of them are easy, and yes most of them need coconut milk. The rich and lightly sweet coconut milk is the key, and one of my weakness is rich with sweet and salty taste from coconut milk in Thai dessert, every times I start eating, I don't know how to STOP! 
And yes, this recipe is one of them, Sweet Sticky Rice with Coconut Milk Topping: ข้าวเหนียวหน้านวล. Soft and sweet sticky rice with salty Coconut Milk Topping, that's very delicious and very easy to make. All you have to do is soak the rice, stir and steam! Is it too easy? Actually the only thing that you have to keep in mind is don't forget to soak the rice before using, as it will effect the texture of the rice. I use Thong Yot as the decoration but it is not important, you can serve with or without any decoration or use only boiled black beans. As the deliciousness is coming from the richness and saltiness of the topping that goes very, very well with the sweetness from the rice.


Recipe: Sweet Sticky Rice with Coconut Milk Topping

 Sweet Sticky Rice with Coconut Milk Topping: 
ข้าวเหนียวหน้านวล
Makes 20 x 20 cm 


Sweet Sticky Rice 
250g .............................. Thai Sticky Rice 
125 ml ........................... Water
125 ml .......................... Coconut milk
80 g .............................. Granulated sugar
1/2 tsp .......................... Salt

Coconut milk topping
375 ml ........................... Coconut milk
20 g ............................... Granulated sugar
3/4 tsp ........................... Salt
2 1/2 - 3 tbsp .................. Rice flour

Decoration (Optional)
......................................... Thong Yot (Egg yolk drops)
......................................... Boiled black beans









 Thai Sticky Rice 
 Put rice in a bowl and pour water into the bowl, mix quickly to remove some extra starch.


   Drain the rice.


Soak the rice in water (about 3 cm above the rice),  for 12 hours (in summer) 
or 24 hours in winter.
 Drain the rice.


 Put the rice in 20 x 20 cm pan.


 Mix water, coconut milk, salt, and sugar together.


 Pour into the pan.


 Steam for 40 minutes.


 Mix all the Coconut milk topping ingredients together.


 Pour over the cooked rice.


 Steam for 15-20 minutes more.


 Let it cool completely.


Cut into pieces and decorate with Thong Yot (Egg yolk drops) and boiled black bean before serving.
