Coffee Marble Cake

 I think I can't live without coffee, it's the first thing that I want to drink every morning.


Each day I drink a cup of latte in the morning, and a cup of hand drip coffee (black) in the evening ^^. Well, it becomes my habit now. I have a plan to spend the Christmas with my sister, but the first thing that I think about was how can I make hand drip coffee there, that's how I crazy about it.
Not only drinking, using it in bake good is delicious too ^^, the smell and bitter taste of coffee goes well with richness and sweetness. So, how about making marble pound cake with coffee? The pound cake is a basic vanilla pound cake, that I add a mixture of coffee and Coffee liqueur to one part of it to create marble effect. Lately I use this method when making marble cake, by put the colour batter into the plain batter bowl, without mixing it. When spoon the batter into the pan, just spoon both of them at the same time, and you will have beautiful marble cake without any effort!

 Coffee Marble Cake
Makes 18 x 7 cm cake cake


Coffee batter
1 tbsp ....................... Whipping cream
1 tbsp ....................... Coffee liqueur
1 tbsp ....................... Instant coffee granules
Vanilla batter
110 g ......................... Unsalted butter
.................................. Pinch of salt
1/2 tsp ...................... Vanilla extract
90 g .......................... Granulated sugar
2 ............................... Eggs
110g ......................... Cake flour
3/4 tsp ..................... Baking powder
2 tbsp ....................... Whipping cream




Preheat an oven to 180 ℃
Line 18 x 7 cm cake pan with baking paper.


Mix whipping cream and Coffee liqueur together.
Heat in the microwave (600w) for 20 seconds.


 Pour Instant coffee granules into the bowl, mix until dissolve.


 Let it cool before using.


 Beat the butter with salt, and vanilla until smooth.
Pour the sugar into the bowl, beat until fluffy and light in colour.


 Pour the eggs into the bowl, beat to combine.


 Sift the flour and baking powder into the bowl.
Fold to combine.


 Fold the whipping cream into the batter.


 Spoon 1/4 of the batter into the coffee batter.
Fold to combine.


 Pour back into the vanilla batter bowl.


 Spoon into the prepared pan.
Use bamboo stick to create marble effect.


 Bake for 50 minutes.


Let cool in the pan for 10 minutes.
Remove from the pan, and let it cool completely.
