Strawberry and white chocolate cheesecake: Cute little cake

 Sometimes you don't need any reasons to make something special ^^ and I believe that each day is special.

 Waking up in each morning, see the people you love, and you can spend another day with them, it's special enough. So, why don't you make something cute and delicious for them today?, hehe. 
This cheesecake is very easy to make, no oven need and the look of it is so cute, right? I use 2 kinds of cheese, cream cheese and soft cheese (laughing cow), because soft cheese is sweet without tangy taste and the texture is softer. But you can use only cream cheese if you like, ^^.  The longest process for this cheesecake is chilling, let the cheesecake firm enough before adding the jelly will prevent the jelly to blend into the cheesecake, so, don't rush. 
Serve this cake with a cup of hot tea is recommended as the cheesecake is quite rich, hot tea will make it lighter ^^. 



Strawberry and white chocolate cheesecake
Makes 4 (7cm)


Base
75g ............................ Digestive biscuits, crushed
30g ............................ Melted butter
25g ............................ Granulated sugar
................................... Pinch of salt
Filling
125g ........................... Cream cheese 
75g ............................. Soft cheese (Laughing cow)
60g ............................ Whipping cream
125g ........................... White chocolate
1.................................. Egg, separated
1/2tsp ......................... Vanilla extract
5g ............................... Gelatin sheets
20ml ........................... Milk
25g .............................. Granulated sugar
10 ................................ Fresh strawberries
Jelly topping
60g .............................. Strawberry puree 
1g ................................. Gelatin sheets
15g ............................... Granulated sugar


 Mix crushed biscuits with sugar, salt and melted butter, then divide into 4 round moulds (7cm).
Refrigerate while you prepare the filling.
Melt the white chocolate, you can use microwave, with medium power for 1 minutes, then 30 seconds each time until melt.  
Bloom the gelatin sheet in cold water for 10 minutes.
Warm the whipping cream and milk together in the microwave (about 40 seconds) until almost boil, put the gelatin into the hot whipping cream, stir until melt.
Mix 2 kinds of cheese together, and place the bowl over a pan of hot water, beat until smooth (or put them in the microwavable bowl and heat at medium for 30 seconds each time until soft). Remove the bowl from hot water add the sugar and beat until combine.
Add the egg yolk, vanilla extract the whipping cream mixture and melted white chocolate, beat well after each addition.
 Whip the egg white until soft peaks formed, then fold into the cheese mixture.
Cut the strawberries and place in the moulds, then pour the cheese mixture into the moulds.
Refrigerate for 2-4 hours before top with the jelly.
Bloom the gelatin sheet in cold water.
Put the sugar and strawberry puree in the microwavable bowl, heat for 40-50 seconds or until almost boil.
Stir in the bloomed gelatin sheet. let the jelly cool completely before pouring over the cheesecake. 
Refrigerate for 2-4 hours to set the jelly.

  8. Yes, you can use gelatin sheets or powder, if using gelatin powder, soften it in 1 1/2tbsp water.

  10. No, the egg is important in this recipe, try using pasteurised egg if you concern.
