I think that you don't always have to use a lot of time and complicated process to make something delicious, simple thing can put a smile on your face too. This time for microwave menu, I cook Thai dish ^^ "Chicken curry". Someone may think that making curry is hard or you need a lot of process, but with microwave, you need only one bowl! If you cooking a lot with the microwave, a microwavable bowl with cover is good to have on hand, no need to use plastic warp all the time.
I love to try different function on my LG SolarDom, but I still love to cook with simple microwave function too. With microwave, your chicken curry will be cooked in 15 minutes ^^ and I love the fact that it can be done on the counter.
For the pineapple I use pineapple slices in syrup, if using fresh one, you may need to squeeze it to release some juice or it will be too much water than pineapple flesh. I have to note about the curry paste, each brands have different hotness and saltiness so you need more or less fish sauce depends on your taste and your curry paste. I love my curry a bit sweet so I use 1 tbsp of palm sugar and if you can't fine palm sugar brown sugar is a good substitute. Cooking really depends on how you like it, I just can't tell you exact amount of the seasoning, taste and adjust to your taste is recommended.
Serve hot with cooked rice, and enjoy simple but delicious Thai curry ^^.
Chicken with pineapple curry
Serve 4
600ml .......................... Coconut milk
200g ............................. Pineapple, cut into pieces (I use pineapple slices in syrup)
2tbsp ............................ Red curry paste
1-2 tbsp ......................... Fish sauce*
1/2 - 1 tbsp .................... Palm sugar (or brown sugar)*
....................................... Basil leaves for sprinkle on top
....................................... Cooked rice for serving
* For fish sauce and palm sugar, you can season to taste. Be caution that each brand of the curry paste is different in saltiness.
Put the chicken pieces into the bowl with the rest of the coconut milk, cover with plastic warp, select microwave function, 600w power, and heat for 6 minutes.
Put the pineapple pieces into the bowl and cover with plastic warp, select microwave function, 600w power, and heat for 3 minutes, or until the chicken cooked.
Sprinkle with basil leaves before serving.
