Nutty Biscotti |
Mostly I make the one with some butter because my family don't like it to be very hard, but today I really yearn for some of the basic biscotti cookie the one that contains no butter at all. This cookie contains a lot of nuts (three kinds of it, almond, hazelnut and pistachio), you can use other kinds of nut if you like ^^.
Because of the dryness, it has good keeping quality, and great for giving too but, that's for you to decide, keeping or giving, it's your choice, hehe.
Nutty Biscotti
Makes about 20
125g ............................... Sugar
......................................... A pinch of salt
200g ............................... Cake flour
½ tsp .............................. Baking powder
70g ................................... Whole almond
30g ................................... Pistachio
30g ................................... Hazelnut
Preheat the oven to 170°C
Roast nuts in the preheat oven for 10 minutes (or until fragrance).
Sift together cake flour, salt with the baking powder.
Beat together the eggs and sugar until light.
Pour the sifted flour into the bowl, mix until combine.
Knead the nut lightly into the dough until combine.
Divide the dough in 2, and roll each dough into a long log 5cm wide and 2 cm high.
Bake for 25 minutes.
Take the cookie out of the oven and decrease the temperature to 150°C.
Cut the cookie into 1.5cm/ piece.
Bake for 20 minutes until dry and golden in color.

Hi, I have bake the biscotti today, it taste delicious but a little disappointment the cookies break when i cut them :( How to prevent it from breaking.

ReplyDeleteThe cookies will be less likely to break if you wait for it to cool before cutting it, ^^, anyway I cut mine while hot and there are some of them that broke too -*-.
