As I promised that I will show you how to make the praline paste, this is the one that you can do. It's very easy. The only problem is the home made one is not as smooth as the commercial one but you can use it in any recipe that calls for praline paste. The look might be different but the taste is very good.
Makes 240ml
115g ................................. Blanched almond (I use slice almond, it's the only thing that I have right now ^^)
225g ................................. Granulated sugar
5ml ................................... Lemon juice
60ml ................................. Simple syrup
Preheat the oven to 170°C
Roast nuts in the preheat oven for 10 minutes (or until fragrance).
Use silicone baking paper, silpat or lightly oil a sheet pan,
Caramelize sugar with lemon juice to a light golden color.
Immediately add the toasted nuts, stir to combine and pour onto the oiled sheet pan.
Let the praline cool and crush into small pieces.
Put the crush praline into a food processor, process and gradually adding the simple syrup until the mixer becomes a fine paste.
Praline paste looks flavourful..

ReplyDeleteHi ^^ I try this recipe afternoon. and mine have sour taste =.= Since I never ever taste this before, it's really confused. Maybe I have too much lime juice (I can't find lemon, so I used lime instead :D). I really wonder how praline paste taste :D Tks ^^

Lemon has sweet and sour taste while lime has more sour taste. The praline shouldn't be sour, the lemon juice stops the sugar to crystallize.
