Chocolate Chocolate Chunk Cookies: "Wish you a happy day!"

I have a lot of my relatives stay with me, their houses are covered with water right now, and they can't stay. So it's my duty to bake (a lot of) sweet to make them happy.

 What's the best thing to eat when you're feeling down, I think a piece of cookie will do.
This soft and delicious cookie is packed with a lot of chocolate. I always believe that chocolate has a healing power for your mind, it lifts you up when you're feeling down. 
For the chocolate chunks, you can use any percent that you want and the flavor of the cookie depend on the flavor of the chocolate. Because the chocolate will melt into the dough create deep and dark chocolate cookie.
It's very easy to make and need so little time. If you think you need something to comfort you, gather all the ingredients (it's not much and many of them are already in your kitchen ^^) and come bake with me. With  comfy smell, deliciousness and warmth of the cookie, "Wish you a happy day"


Chocolate Chocolate Chunk Cookies

Chocolate Chocolate Chunk Cookies
Make about 30-32 pieces

125g ................................ Unsalted butter, softened
175g ................................ Dark brown sugar
25g .................................. Caster sugar
2tsp ................................. Vanilla extract
1........................................ Medium egg
175g ................................. Plain flour
25g ................................... Cocoa powder
1tsp .................................. Bicarbonate of soda
........................................... A pinch of salt
300g ................................. Dark chocolate, chopped roughly



Line sheet pan with baking paper. 
Preheat the oven to 170°C
Sift the flour, cocoa powder and bicarbonate of soda together.

Beat the butter, both sugars, salt and vanilla extract until light and fluffy.
Beat in the egg. Fold half of the flour mixture into the dough.
Stir in the rest of the flour with the chocolate chunks.
Roll the dough into a ball (or use a scoops), and place on the prepared sheet pan. Spaced 4-5cm apart.
Bake for 12-14 minutes until barely puffed, and start to color at the edges.
Leave to cool on the sheet pan for a few moments to firm slightly then move with a spatula to a wire rack to cool.


Ready to serve!

  3. This recipe sounds very good and i think it is delicious and it fits perfect with my taste. My opinion is that this isn`t a very hard recipe so i will try it very soon, thanks a lot for sharing.
