Mousse au chocolat a la pomme et cannelle: Chocolate mousse with apple Lovely delicious mousse!!

I love to serve dessert in a glass ^^, it's cute, right? Beside from being cute most of them are easy to prepare too. This time the recipe comes from my new book, hehe,

I start to realize that I collect many of his books ^^, well, he's a Picasso of the pastry world, so collecting his books for me is like collecting his painting.
But I have to admit that there are a lot of recipes which will repeat in his books again and again, -*-, I have only 2 choices, keep on buying his books and don't pay attention to them (because they are some new recipes and ideas too), or stop buying, haha, you know I choose the first answer.
But luckily, for this book, there are a lot of new ideas and recipes, most of all when buying Japanese Baking book, there a lot of how-to photos and a small scale recipe too.
I didn't see this recipe "Mousse au chocolat a la pomme et cannelle" in other books (or I don't remember seeing it, haha), so I choose to make it. The chocolate mousse with apple, sounds good!!!!!!
When eating the mousse, you will get a taste of the sauté apple, that is sweet and refreshing ^^. I love the taste of this mousse, it's not too sweet, so when it's not too sweet, it's mean you will be able to enjoy it more, hehe.This time, I put the mousse in bigger glass than the original recipe, well the original one will serve 10 (very small cup), but I think that's too small. 
I really enjoy this mousse, maybe because I love the apple, they're sweet and soft and if you love apple and chocolate like me, I know that you will be happy with this recipe too.





Mousse au chocolat a la pomme et cannelle
Serves 4 (using small glass 5.5x8.5cm)


Pomme Puree
8g .................................... Butter
80g .................................. Apple, diced
12g ................................... Sugar
¼ tsp .............................. Cinnamon
15g .................................. Rum
Mousse Chocolat
50g .................................. Whipping cream
.......................................... A pinch of Cinnamon
138g ................................ Dark chocolate (66% cocoa mass)
100g ................................ Egg whites
20g .................................. Sugar
Topping
16g ................................... Butter
80g ................................... Apple, diced
1tbsp ................................ Sugar


Melt the butter in a small saucepan then add the apple, sauté the apple until soft.
Add sugar and cinnamon, heat until the mixture is very soft, follow by the rum stir once and take the mixture out of the heat.
Pour the mixture over a fine strainer, let it cool completely.
Melt the chocolate over a bowl of warm water(don't let the water touch the chocolate bowl), when the chocolate melt, pour the cream into the chocolate stir to combine.
Whip the egg with sugar until stiff peak form.
Fold the meringue into the chocolate mixture, then add the apple, fold to combine.
Pour the mixture into the containers.
Refrigerate until firm (about 2-3 hours).
Make the topping by melting the butter in a small saucepan then add the apple, sauté the apple until soft, then add the sugar stir until the sugar caramelize.
Spoon the topping over the mousse and serve.

  3. lovely work as usual Pook. like you, i'm a Pierre Herme Junkie! Hoping that this chocolate-themed book would be translated into Mandarin soon.

    i noticed that there's quite a bit of repetition of recipes vis-a-vis ph10, e.g. macaron inca, macaron chuao?
