Thank you for your lovely blog. I am from Singapore. Can I ask is it ok to beat sugar and egg together but not over hot water. Will the result still be the same?
I hope to learn from you to improve my baking.

Thank you.

Hi, Jacqui
Nice to meet you ^^, and thank you for visiting my blog too.
About the method of beating eggs with sugar over warm water, it will make the result more puffy, and the foam is quicker to be formed. You can make it without the warm water too, but the beating time will be longer.
