Vegan Brownies

This time my brownie is not only rich in chocolate taste but it contains no egg or any dairy product too!


Well, in October I will post vegan (or vegetarian recipes) because many Thai people are eating vegetarian for 10 days, you can call the Vegetarian Festival or Tesakan Gin Jay. (เทศกาลกินเจ). It happens every October.

This time it's a recipe that will make every chocoholic happy even they can't use egg or butter in their food!   

Very tense in chocolate taste, this brownie uses silken tofu instead of the egg and with a small amount of the oil, so it's quite low in fat too. Plus this brownie also uses maple syrup instead of white sugar, not only it's healthier but the syrup makes the brownie remain moist too.

For baked good that uses a small amount of fat, the most important thing that you have to take caution is the baking time, don't over-bake it or the brownie will become dry. Check the brownie after baking it for 25 minutes by inserting a toothpick into the center of the brownie, pull it out, if there won't be any wet batter on it (a few dry crumbs are OK), it's fully baked.


Vegan Brownies
Makes 15 x 15 cm. brownie


150 g ....................... Silken tofu
2 tbsp ....................... King Rice bran oil
50 ml ....................... Apple juice
50 ml ...................... Maple syrup
1/8 tsp .................... Salt
100 g ....................... Cake flour
50 g ......................... Cocoa powder
1 tsp ......................... Baking powder
50 g ......................... Walnuts (Chopped) 
40 g ......................... Dried cranberries


Preheat an oven to 170℃  
Line 15 x 15 cm. pan with baking paper.


I use King rice bran oil.

Cut Silken tofu into pieces, and put it into a bowl with rice bran oil. Beat until combine.

Put the apple juice, maple syrup, and salt into the bowl. Beat to combine. 

Sift the cake flour, cocoa powder, and baking powder into the bowl.

Put the chopped walnut and dried cranberries into the bowl.

Fold to combine.

Put the batter into the prepared pan, and smooth the top.

Bake in the preheated oven for 25-30 minutes.

Let the brownie cool in the pan for 5 minutes.


Then remove from the pan, and let it cool completely on a wire rack.
