Vegan Crumble cake

 Another vegan recipe for this month ^^.



This cake is very easy to make (well, most of my recipes are easy, haha), and it's good for your health. As there is a lot of fiber from whole wheat flour, fruit, and nut, and this cake uses natural sweetening (maple syrup) instead of white sugar too.
Not only that this cake can be enjoyed by people who eat vegan food but people who's allergic to egg and dairy product will be happy with it too. 
You can use any kind of dried fruit,  frozen fruit, and jam (I suggest you use the one that you have), or change it each time that you make it with different fruit, it will be fun to eat something new, right?

Vegan Crumble cake
15 x 15 cm. Pan




Crumble

20 g ..................... Whole wheat flour
1 tbsp ................... Almond powder
1 tsp ..................... King Rice bran oil
1 tsp ..................... Maple syrup
30 g ..................... Walnut, chopped
Cake batter
100 g ................... Whole wheat flour
1/2 tsp ................. Baking Soda
50 g ..................... Almond powder
100 g ................... Soy milk
............................. Pinch of salt
3 tbsp .................. Maple syrup
2 tbsp .................. King Rice bran oil
1 tbsp ................... Vinegar
60 g ...................... Frozen fruits, cut into small piece
25 g ......................  Dried cranberry
2 tbsp ................... Jam


Preheat an oven to 170℃  

Line 15x15 cm pan with baking paper.


 I use King rice bran oil.


 Make crumble:
Mix whole wheat flour with almond powder, maple syrup and King rice bran oil.
Add the walnut and mix to combine, set aside while making the cake batter.


 Put whole wheat flour into a bowl, sift the baking soda into the bowl.
Put almond powder into the bowl.


 Mix to combine.


 Mix soy milk with salt, vinegar, maple syrup, and King rice bran oil.


 Pour into the whole wheat flour bowl, and mix to combine.


 Put frozen fruits and dried cranberry into the bowl.


 Mix to combine.


 Put into the prepared pan, and spread the jam over the top of the batter.


Sprinkle the crumble over the top.
Bake for 35-40 minutes.


Let the cake cool completely before cutting into pieces.
