Chocolate icebox cookies

A basic cookie that is easy to make and enjoy ^^.



My family loves to eat cookies, and I always have some of them in a jar on my kitchen counter, for me it's fun to make something new all the time, and I have enough time to bake it too.
If you don't have enough time, but you still want to eat delicious cookies, what can you do? Icebox cookie is one of the best ways to deal with this problem ^^. Just make it when you have time (making this cookie use less than 15 minutes), and freeze it. When you want to eat, just cut and bake it, that's all. 
As each brand of the cocoa powder is different in taste, adjust the amount of the icing sugar to suit your taste. You can make this cookie dough and freeze it for 2 months, with this way you will always have newly baked cookie any time that you want.

Chocolate icebox cookies
Make 22-24 pieces


45 g ........................ Unsalted butter
............................... Pinch of Salt
30-40 g ................. Icing sugar
1 ............................. Egg yolk
75 g ....................... Cake Flour
15 g ........................ Cocoa powder
............................... Sugar for coating the dough




 Beat the butter with salt until smooth, add the icing sugar and beat to combine.


 Put the egg yolk into the bowl, beat to combine.


 Sift the cake flour and cocoa powder into the bowl.


 Mix to combine.


 Roll the dough into a cylinder.


 About 25 cm. long.
Cover and refrigerate for at least 2 hours.


 Press until sugar stick to the side of the dough.


 Cut into pieces (about 22-23 pieces).


 Place on a lined baking sheet.



Bake in 160℃  Preheated oven for 20-25 minutes
