Apple Cheddar upside down cake: Homey cake, happy moment!

 I thought about this cake a week ago, but actually I still can't decide what I want it to be like.

 Apple and cheddar cheese is a classic combination, first I wanted to turn them into the entremets (well, this thought's still in my head ^^, but there are many elements that I have to decide). But the homey feeling when we talk about the apple cake is something that I want right now, so rather than making a lot of effort, easy, easy is what I long for.
For the cake, I don't use any salt in the batter, because the taste of the cheese is salty so unsalted butter is required here. If you really love the taste of toffee sauce, you can make more of it and drizzle over the cake before serving, it will be delicious too, but for my family it will be too sweet. It's a kind of cake that I can't stop eating, haha, sweet and salty serve it with a cup of tea, it's the moment that you can enjoy.



Apple Cheddar upside down cake
Make 18 cm cake

Toffee sauce
80g ............................... Unsalted butter
80g ............................... Brown sugar
....................................... A pinch of salt
1/4tsp .......................... Cinnamon


Topping
1 1/2 ............................. Apple, peeled and sliced


Cake
90g ................................. Cake flour
30g ................................. Almond powder
1/3tsp ............................ Baking powder
100g ............................... Unsalted butter
75g .................................. Granulated sugar
2 ...................................... Eggs
1 ...................................... Egg  yolk
20g .................................. Honey
50g .................................. Mild Cheddar cheese (chopped)
50g .................................. Walnut (roasted and chopped)


Preheat the oven to 160°C.
Line the bottom of the pan with baking paper, set aside. 
 Pour the brown sugar into a saucepan and place over medium heat, let the sugar melt completely then add the butter, salt and cinnamon, take the pan out of the heat and stir until  combine.
Pour the toffee sauce into the prepared pan and place the sliced apple into the pan.


Make the cake:
Sift together the flour and baking powder, set aside.
 Beat the butter with sugar until fluffy and light in color. Add 1 egg beat to combine, add the almond flour beat to combine.
Add another egg and egg yolk into the bowl, beat to combine. 
 Pour the honey into the bowl beat until combine, then fold in the flour mixture with the cheddar cheese and walnut.

Put the batter into the prepared pan.
Bake for 35-40 minutes, or until the bamboo stick insert into the center come out clean.
