Pistachio and chocolate chips Biscotti: special treat for everyone!

I think I make a lot of cookies lately ^^, well, it's easy to make, easy to keep and very easy to eat too, hehe. 

Pistachio and chocolate chips Biscotti 
It's suitable for the busy time, ^^" well, I'm a bit busy lately but still trying hard to find enough time to bake. This time I choose the biscotti, but the recipe that I make is not the traditional kind of biscotti. This one contains a lot of butter, when some of the recipes don't have any oil or butter at all.
So, after baking this one will be tender than the one with no fat, fat provides tenderness, the recipe without oil or butter has only fat from egg yolk which is very little. Like the "Nutty Biscotti" that I made before that one doesn't contain butter or oil at all. It's good for anyone who don't like their cookie to be hard or dry and because it's not hard, you can eat it on its own too, hehe.
For the biscotti, the baking time is very important too, first baking is for the cookie to rise until fully cooked, then second is for drying it and create characteristic of biscooti. And after keeping it if you want the cookie to be crisp again, just bake it in the 150°C for 10-15 minutes to dry it again.

Recipe: Pistachio and chocolate chips Biscotti

Pistachio and chocolate chips Biscotti 
Makes about 15 pieces


 155g ............................... All purpose flour
1/2tsp ............................. Baking powder
1/8tsp ............................. Baking soda
85g ................................... Butter
90g ................................... Granulated Sugar
........................................... A pinch of salt
1tbsp ................................ Honey
1/2tsp .............................. Vanilla extract
1 ........................................ Egg
80g ................................... Pistachio
60g ................................... Chocolate chips
1 ........................................ Egg white
10g .................................... Pistachio, finely chopped
1tbsp ................................. Granulated Sugar





Preheat the oven to 180°C
Line 1 baking sheet with baking paper.
Sift the flour, baking soda and baking powder together.
   Beat the butter, salt, honey and sugar until light and fluffy, add the vanilla extract, put the egg into the butter and beat to combine. 
Add the flour mixture into the bowl with the pistachio and chocolate chips, fold until combine. 
Shape the dough into a log.
Brush with egg white and sprinkle with chopped pistachio and granulated sugar.
Bake the log for 25-30 minutes until golden.
Let the log cool for 15 minutes, lower the oven temperature to 150°C
Cut into 2cm pieces, and place on the baking sheet.
Bake for 15-20 minutes or until the cookies dry.

  2. I must try it!! Its for sure!!I love bicsoti!!Last time I made chocolate biscoti it went very hard-no idea what I made wrong,but that one look promising!!Can´t wait to try!
