Peanut butter blossom cookies: Peanut butter and chocolate Kisses, don't you think it's so cute?

There are many reason for me to make this cookie, first I have a lot of Hershey’s Chocolate Kisses that I bought when I went to supermarket (haha, like I tell you, I just can't stop buying it even thought I can't eat them all), and second it contains peanut butter and third it's cute ^^.  

 Only the last reason is a good one for making this cookie, right?  
The cookie is very easy to make, and other good point is after mixing the dough you will need to refrigerate the dough until firm, which mean you can mix it when you have time and bake it when you want ^^, the dough can be kept for 4 days in the refrigerator. And I think it's better to bake when you need it because I find the cookie is not good for keeping, the chocolate kiss will start to bloom (have white stalk around it) , so keep it for 2-3 days will be Ok.  
The recipe comes from:...................., the little magazine that I bought year (hehe, when i said last year, it sounds like a long time ago but it just 3 months). I carried it around the house for a month without knowing what to make, ^^, because there are many things that I want to. I think that many people love to use the book from .................. too,  most of the recipes are reliable. But I didn't say that they are the best, because when it come to the taste, it depends on the taster ^^. Like this cookie, there are many kinds of chocolate Kisses to choose from, dark, milk, or etc., so choose the one that you like ^^. Or if you want to go over the top, you can you chocolate with high cocoa mass instead of the chocolate Kisses but the look won't be as cute as this.
So, why don't you crate you own cookie with the chocolate that you like, it's your own test kitchen.




Peanut Blossom Cookies
Make about 4 dozen cookies





180g ................................ All purpose flour
55g .................................. Salted dry-roasted peanut
¼ tsp .............................. Salt
¼ tsp .............................. Baking soda
¼ tsp .............................. Baking powder
115g ................................. Unsalted butter, soften
65g ................................... Dark brown sugar
65g ................................... Granulated sugar
125g ................................. Creamy peanut butter 
1 ........................................ Egg
1tsp .................................. Vanilla extract
48 ..................................... Hershey’s Chocolate Kisses, unwrapped


1. Adjust oven rack to middle position and heat oven to 350 degrees F. Line 2 baking sheets with parchment paper. 


Process ⅔ cup flour and peanuts in food processor until finely ground. Transfer to bowl and stir in remaining flour, salt, baking soda, and baking powder. 


With electric mixer at medium-high speed, beat butter and sugars until light and fluffy, 2 minutes. Add peanut butter and continue to beat until combined. Add egg and vanilla and beat until well incorporated. Reduce speed to low and add flour mixture in two batches, mixing until just combined after each. Refrigerate dough until stiff, 30 minutes

Roll dough into 1-inch balls and space 2 inches apart on prepared baking sheet. Bake one sheet at  a time, until just set and beginning to crack, 9 to11 minutes. Remove sheet from oven and firmly  press one Kiss in center of each cookie, Continue to bake until lightly golden, about 2 minutes. Cool 5 minutes, then transfer to wire rack to cool completely. Repeat with remaining dough.

  4. Yes, they are very cute ! I have printed out this recipe too sometime back and wanted to try too ! But it's still somewhere in my to-bake-list !
