Today, I play with the ingredients ^^. Adding some ingredients into basic recipe is fun, you can turn something simple into delicious (or wild) creation. Actually baking is a science so no matter you want to do, don't forget this point.
This time I turn simple scone into chocolate + cheese (and chocolate chips). Because I don't want cheese to turn into paste I finish folding my scone before adding it. By press the dough and place the cheese on top, then fold the dough to cover it, soft cheese still hold it form. I don't use round cutter because after the first cut, the dough will be gathered again and it not easy to do with soft cheese chunks in the dough.
I use Laughing cow (its taste is sweet and less tangy than cream cheese but the texture is very soft), but you can use cream cheese too.
For me serve with a cup of milk is the best choice, ^^ but if you want a cup of hot coffee is not bad too.

Chocolate soft cheese scone
Make 8
230g .......................... All purpose flour20g ............................. Cocoa powder
1tbsp .......................... Baking powder
50g ............................. Superfine sugar
1/4tsp ......................... Salt
80g ............................. Unsalted butter, cool and cut into pieces.
150g ........................... 1 egg + Whipping cream
50g ............................. Chocolate chips
40g ............................. Soft cheese (Laughing cow) or cream cheese, cut into small pieces
Preheat the oven for 200°C.
Use your finger to mix the butter into the flour mixture until fully mix, the mixture will look like small bread crumbs. Add the chocolate chips, mix to combine.
Whisk the egg and whipping cream together and pour into the bowl.
Mix until some part of the mixture moisten, pour onto the work surface, press and fold the dough until smooth, note that this dough is high in moisture. When the dough start to be smooth on top, press into large rectangle and place the soft cheese on the dough. Fold the top and bottom of the dough to cover the cheese.
Fold lightly, then pat the dough into 22x11 cm and cut into 8 pieces.
Place on the pan, brush with whipping cream.
Bake for 15-16 minutes.
ココアとクリームチーズのスコーン
(8個分)
20g ............................. ココアパウダー
大さじ1 ....................... ベーキングパウダー
50g ............................. 砂糖
小さじ1/4 ............... 塩
80g ............................. バター 食塩不使用, 1cm角に切って
150g ........................... 1 卵+ クリーム
50g ............................. チョコレートチップ
40g ............................. ソフトチーズ (Laughing cow) (あるいはクリームチーズ), 1cm角に切って
オーブンを200℃に予熱する。
ボウルに 中力粉とココアパウダー、ベーキングパウダー、砂糖、塩を入れてあわせて混ぜる。バターを加え、粉をまぶしながらバターをすり混ぜ、全体にぽろぽろのそぼろ状になるまですり混ぜる。ボウルに チョコレートチップ 入れて混ぜる。
クリームと溶き卵を加えて混ぜて、調理台の上に乗せる。数回、生地を折り畳んで。
生地に手を押し付けて、スムーズになる。
生地にクリームチーズを乗せて、生地をおりたたむ。
22x11 cm センチ程度にしておいて、ナイフで、8個分カットする。
オーブンシートの上に乗せて、オーブンに入れて15-16分ほど焼く。
