Chocolate almond cake: Chocolate is good for you!

How many day that you can stay away from chocolate? For me, it's hard to do that, haha. I have a lot of chocolate, and can't stop myself from having some of them everyday.

Chocolate is good for you, daily chocolate consumption may reduce the risk of heart attack and stroke, it contains antioxidants called polyphenols, also found in red wine, which prevent the oxidation of harmful cholesterol. Its contains filling fiber, which is a natural appetite suppressant. The smell of chocolate has been found to slow down brain waves, making us feel calm. Also, chocolate is a good source of chromium, which helps control blood sugar because it is involved in making glucose available in the body. Chocolate can make you more alert. it contains a stimulant called theobromine, a caffeine-like substance that is thought to make us more alert. But theobromine doesn't have the side-effect of giving us the jitters, like caffeine, and chocolate contains only minute amounts of caffeine. So eating chocolate (especially dark chocolate) is not a bad choice for you. ^^
Eating chocolate bar is good, but when I have a lot of chocolate bars, I think it's will be great to turn it into something delicious too. This cake use dark chocolate as the key ingredient, the taste of the chocolate is the taste of the cake too ^^. This time I use chocolate "Madagascan Gold" from Willie's Cacao, the taste is lovely and fruity. Actually you can use other brands or any kinds of chocolate as long as you love it. This cake contains no flour so it's gluten free. 
The method of making is the same as butter cake, but the meringue makes the cake lighter. The cake will raise in the oven, but will sink a bit while cooling (it makes the top level ^^).
Because the taste of my chocolate is fruity, having a slice of this cake with a cup of fruity tea is a good combination for me. (If you ever heard about having chocolate is better than XXX because it's so pleasurable that make us release endorphins in the brain. These have similar pharmacological actions as morphine, acting as pain-relievers and giving us a
sense of wellbeing. So, rather than having XXX come and have a great tea time with me instead, haha).


Chocolate almond cake 
Makes 15cm cake


Cake
65g ............................. Unsalted butter
65g ............................. Icing sugar
3 ................................. Eggs, separated
65g ............................. Dark chocolate (70%)
125g ........................... Almond powder
1 1/2tsp ..................... Rum 
Simple Chocolate Glaze
60g ............................. Dark chocolate
20g ............................. Unsalted butter

Preheat the oven to 180°C Line 15cm round pan with baking paper.


Put the chocolate in food processor, process until finely chopped.
Beat the butter with icing sugar until combine add the rum and beat until light in color.
Pour egg yolks into the bowl, beat to combine.
Pour almond powder into the bowl, beat to combine, then add the chopped dark chocolate, fold to combine.
Whip the egg whites until firm peak formed.
Fold meringue into the batter in 3 additions, until fully combine.
Put the batter into prepared pan.
Bake for 40 minutes, or until the top spring back when touch lightly.
Let the cake cool completely, in a pan. The top will flatten while cooling^^.
Make Simple Chocolate Glaze:
Put the dark chocolate and butter in a microwavable bowl, heat in low power for 1-1.30 minutes or until start to melt, stir until melt completely. 
Remove the cake from the pan, pour the glaze over the cake, let the glaze set lightly before serving.
