Cooking for one: Prawn and Feta Omelette

 Cooking for myself is so much fun for me, ^^, not that I don't want to cook for other people but when you cook for yourself, you can be free.
Using any ingredients that you like, trying something new, even being adventurous for sometime, hehe. Anyway, this time, it's not that much ^^, I just making an omelette with something I love to eat, the feta cheese. This salty cheese is always has a place in my fridge, crumble it into salad is my favorite menu. The taste is salty with a hint of milky taste. When using feta cheese, you have to beware of the saltiness from the cheese. Serve this delicious omelette for your yourself with a bowl of fresh salad (if you like, you can drizzle some chilli sauce on top of the omelette), and enjoy this simple nutritious meal.



 Prawn and Feta Omelette
Serve 1


1 .............................. Large tomato, cut into 6 pieces 
3tbsp ...................... Chopped spring onion
5-6 ........................... Large prawn
2 ............................. Eggs, lightly beaten
................................. Pinch of dried Italian seasoning
25g .......................... Feta cheese, crumbled
.................................. Salt* and pepper
.................................. Dried chilli flakes, to taste (optional)
.................................. Oil for frying
*note, the fate cheese is very salty so when season the egg don't add too much salt.

Preheat the grill to high.
 Put the oil in a frying pan, add the tomato pieces, spring onion, cook over medium heat until the tomatoes soften, add the prawns, season and cook until the prawn turn into lightly pink color, add the Dried chilli flakes, remove from the heat.
Season egg with salt and pepper. 
Heat 20cm ovenproof frying pan over medium heat, when the pan hot pour the beaten egg into the pan. Cook until the underside of the egg is beginning to set but the top still runny.
Sprinkle the Italian seasoning over the omelette, then pour the tomato and prawn mixture over the top, crumble the Feta cheese over the egg, and add a drizzle of oil.
Place under the grill and grill for 2-3 minutes until the egg is just cooked through.
Remove from the grill and serve.
