Pineapple Cake


 I think that most of us have to stay at home.


And it's the best way to wait for the situation to become better (and I hope that it will be soon).
Anyway, stay at home for me is not a bad thing, well, I'm the real homebody, haha. There are many things to do, such as reading, I have a load of novels that can keep me busy for more than 10 months (not including the books in my kindle), or playing games, as I still have new games for more than 6 games that I still don't have time to play ^^".
So for this time, try to find something to keep you happy and busy, is the best thing that you can do.
And today the cake that I made is Pineapple cake, that used canned pineapple, that's suitable for this time.
It's a simple butter cake with pineapple, it's refreshing in both taste and looks.
Even when we can't go out don't forget to find happiness from the simple thing around you.

Pineapple Cake
Makes 18 cm cake


Cake
100 g ................. Canned pineapple (Drain before using)
130 g ................. Cake Flour
1/2 tsp ............... Baking powder
60 g ................... Unsalted butter
1/2 tsp ............... Vanilla extract
1 tbsp ................. Honey
90 g ................... Icing sugar
2 ........................ Eggs
60 ml ................. Whipping cream
1 tsp ................... Lemon juice

Icing
70 g .................... Icing sugar
1 tbsp ................. Plain yogurt

For decoration
............................ Canned pineapple



Preheat an oven to 180℃
Butter and flour 18 cm. ring pan and set aside.

Cut the pineapple into 1.5 cm. pieces.

 Sift the flour and baking powder together.

 Beat the butter with vanilla and honey until smooth.

 Add the icing sugar and beat to combine.

 Beat in the eggs.

 Pour half of the sifted flour into the bowl, beat to combine.

 Put the whipping cream and lemon juice into the bowl and beat to combine.

 Pour the rest of the sifted flour into the bowl with the pineapple.

 Fold to combine.

 Pour the batter into the prepared cake pan, and smooth the top.

 Bake for 25 minutes.
Remove from the oven and let the cake cool in the pan for 10 minutes.

 Flip the cake and remove the pan.
Let the cake cool completely.

 Mix the icing sugar and yogurt together.

Glaze the cake with the icing and decorate with pineapple pieces before serving.
