Bao Zai Fan


Tomorrow is New Year, I think everybody is busy with a lot of party right?  


But for me, as I work at home, so every day for me is the same, haha, plus I don't want to go anywhere, just walking into the kitchen and cook something can make me happy.
Today, the recipe that I will share with you is a rice dish. It's called Bao Zai Fan(煲仔飯) or clay pot rice. The traditional one uses a clay pot to cook the rice, but heavy-based pot can be used too.
It's a Cantonese rice dish that you can find in Hongkong, well, if you don't have enough time to go to Hongkong, ^^ making it at home is a good choice!
I suggest mix everything together and drizzle the sauce over the rice before eating, is the best way to enjoy this dish.

Recipe: Bao Zai Fan/ 煲仔飯

Bao Zai Fan
Serves 2


Sauce
50 ml ..................... Soy sauce
1 tsp ....................... Mirin
1/2 tbsp ................. Sugar

Seasoned Minced Pork meat
150 g ....................... Minced Pork meat
1 tsp ........................ Chinese wine (Shaoxing wine)
1-1 1/2 tsp ............... Soy sauce
1 tsp ........................ Sesame oil
1/4 tsp .................... Five-spice powder
1/2 tsp .................... Sugar

Rice
270 ml .................... Thai Jasmine rice
270-290 ml ............ Water

For serving
1 ............................. Egg
............................... Spring onion, finely sliced
............................... Pepper





 I use Thai Jasmine rice.


 Mix the minced Pork meat with the seasonings.


 And leave for 15 minutes.


 Put all the sauce ingredients into a small saucepan, place over low heat.
Remove from the heat after boiling, set aside.


 Pour water over the rice, mix quickly to remove some extra starch. 


 Drain the rice.


 Put into a small pot (I use 14 cm pot) with 270-290 ml of water.


 Place over high heat, stir from time to time until the rice boils.


 Cover a lower the heat to medium, boil for 5 minutes.



 Place the seasoned minced pork meat over the rice.


  Cover and cook for 5 minutes more.



Remove from the heat, crack the egg over the pork, sprinkle with spring onion, season with pepper and drizzle with sauce before serving.
