One bowl blueberry cheesecake

 I spending most of my time reading light novel lately ^^.


Because I bought too many of them (well, if I read about 1 book per 3-4 days, I still have books to read everyday for at least 6 months, haha), so before buying more (there are still many books that I want to buy), I have to finish some of them first.
Anyway, I still hang around in my kitchen, sometime just reading, but I love to be here, but the only problem is most of the light novel that I read are food related and it makes me hungry, haha.
Making delicious thing is not hard, you can spend 2-3 days making very, very complicated dessert, or you can use only 1 -2 hours it depends on your decision. For me it's up to my mood or my time. When I have something else to do like this, I go for the easier thing and feel happy with it.
With only 1 bowl you can make this simple (and delicious) cheesecake, it's one of the easiest cheesecake recipe!!!! 
For this one, I use spatula for mixing the batter, as it doesn't add too much air into the cake, so your cheesecake won't rise too much when you put it into the oven. The result is creamy and delicious cheesecake bar without any effort. 
Well, you can use other kind of berry instead of the blueberry too, and fresh or frozen one are OK for this recipe too.

One bowl blueberry cheesecake
Make 20 cm cake



250 g .................... Cream cheese 
1/8 tsp .................. Salt
1/2 tsp .................. Vanilla extract
80 g ...................... Granulated sugar
2 ........................... Eggs
3 tbsp ................... Cake flour
200 g .................... Whipping cream
1 tsp ..................... Lemon juice
80 g ..................... Blueberry (fresh or frozen* )
Topping
45 g ...................... Blueberry (fresh or frozen*)

*If using frozen blueberry, it doesn't need to be defrosted. 





Line 20 cm cake pan with baking paper
Preheat an oven to 170℃ 


 Put cream cheese, salt and vanilla into a bowl.
Press with spatula until smooth.


 Pour sugar into the bowl and mix to combine.


 Mix in 1 egg at a time.


 Sift flour into the bowl.
Stir to combine.


 Pour whipping cream and lemon juice into the bowl.
Mix to combine.


 Mix in blueberries.


 Pour into the prepared pan.


 Place blueberries (topping) over the batter.
Bake for 30-35 minutes.


Let it cool completely on a wire rack.
Refrigerate at least 1 hour before serving.
