Lemon Scones

 It's much easier than making bread, with less than 1 hour and you will get lovely fragranced scone.




When I don't have time but I have to bake something for my family breakfast, I always turn to biscuits or scone. As it requires less time to make and there are so many variations that you can create.  This time my scone is flavored with lemon, with both juice and zest, this scone doesn’t have only a smell but a lightly tangy taste too. 
This scone is very easy to make (well you always hear this word in my blog, haha), for the scone that contains egg it will help rising up the scone too, so as long as you can keep yourself from knead the dough, you will get fluffy scone for sure !!!

If you love to make add more fragrance you can use lemon zest from 2 lemon (instead of one). For those who really love lemon, I suggest serving it with lemon curd, and you will be in lemon world, hehe.

Lemon Scones
Makes 9-10 scones



250 g .............................. All purpose flour
........................................ Lemon zest from 1 lemon
30 g ................................ Granulated sugar
1 tbsp ............................ Baking powder
1/8 tsp ............................ Pinch of salt
50 g ............................... Unsalted butter, cut into pieces
80 g  ............................. Whipping cream
1 tbsp ........................... Lemon juice
1 ................................... Egg
 ....................................... Whipping cream, for brushing the scones




Preheat an oven to 200 C

Line a baking sheet with baking paper.


 Mix whipping cream with lemon juice, set aside.


 Smash lemon zest into the sugar.


Put flour, sugar (with lemon zest), salt and baking powder into a bowl, whisk to combine.
Put the butter into the bowl.


  Mix with your finger tips. Until fine crumbs formed.


 Put whipping cream and egg into the bowl.


  Stir until fully moist, and press until dough formed.


 Remove from the bowl, press to level the top. 


 Fold the dough 5-6 times.


 The skin will formed.


 Cut with 4.5 cm cutter.


Brush the top of the scone with whipping cream. 


  Bake for 15-18 minutes.


Ready!!!!
