Just sit, relax, and enjoy my at home moment. Anyway I still dream about food, there are many things in my head, but making it is another story. Spending my time in the kitchen is my way of relaxing too.
So, the best thing that I can do is making something super easy, well, most of my recipes are easy so I don't think that you will be surprised hearing it. Simple ingredients, straight forward method, no technique required, recipe that anyone can make and enjoy, that's my way of cooking and baking.
Cake that you don't need to whip or fold like this one is something that I always love to create. All you have to do is putting all the ingredients into a bowl, and stir them together, so easy right? But with yogurt in the list, it gives the cake slightly tangy taste and it helps rising the cake too. Beware when preparing the pan, brush it thoroughly so you can remove the cake from the pan easily.
Yogurt Marble Cake
Makes 18 cakes
Cake batter
85 g ........................... Rice bran oil
135 g .......................... Granulated sugar
60 g ............................ Plain yogurt
50 g ............................ Milk
2 ................................. Eggs
1/2 tsp ........................ Vanilla extract
.................................... Pinch of salt
150 g ........................... Cake flour
1 1/2 tsp ...................... Baking powder
Chocolate batter
65 g ............................. Dark chocolate (66%)
40 g ............................. Plain yogurt
2 tsp ............................ Cocoa powder
Preheat an oven to 170℃
Brush 18 cm ring pan (or 18x7 cm loaf pan) thoroughly with shortening.
Melt the chocolate by put in a microwave (600W)
heat for 1-1.30 minute.
Stir until fully melt, set aside.
I use rice bran oil.
Put the oil, yogurt, milk, sugar, vanilla and eggs into a bowl. Stir to combine.
Sift the flour and baking powder into the bowl.
Stir to combine.
Mix 1/3 of the batter with melted chocolate, cocoa powder and yogurt.
Until fully combine.
Pour into the batter bowl.
Mix only 1-2 times.
Pour the batter into the prepared pan.
Use a bamboo stick to create marble effect.
Bake for 40-50 minutes.
Rest into the pan for 10 minutes.
Remove from the pan, and let it cool completely.
