Strawberry Meringue cake

And now, we're in 2018, with lot of hectic moment in the year of 2017, there are something that I want to change in this year ^^.


Don't worry, I'm not going to stop sharing the recipes, haha, because for me baking, cooking, taking video, taking photo, and writing about it, all of them make me happy.
The first thing, I want to have more slow time with myself, and I decided to spend my Sunday for reading (and watching DVD, anime that I want ), or just sitting still and watch the time goes, I will use less computer for 1 day. I know that in this century, the thing that is very hard to do is "Doing nothing". We're overwhelmed with information and it makes we want to run. But the fact is we ended up spending time clicking the mouse or staring at the mobile phone for more information, it's the state of doing nothing (without any productivity) and it's consuming too many of our energy.
It's not easy to change our habit, but I think that I have too ^^. 
Well, now let's talking about today recipe. Today, we mix both almond butter cake with meringue, cream and strawberry, and come up with rich, sweet and very cute cake. With this recipe, you bake the meringue with the cake, and it's easy (and take less time). The meringue will fallen a bit (as it's not as dry as you bake it alone),  it will be very soft and melt into sweet cream when eating with whipped cream. So, I suggest serving this cake the day that it's made as the meringue will be in the most delicious stage.

Strawberry Meringue cake
Makes 18 cm cake



Cake
60 g ............................ Unsalted butter, melted
30 g ............................ Whipping cream
1/2 tsp ....................... Vanilla extract
125 g .......................... Fresh strawberries, cut into pieces
85 g ............................ All purpose flour
50 g ............................ Almond powder
1/4 tsp ........................ Baking powder
1/8 tsp......................... Salt
1 ................................. Egg
2 ................................. Egg yolks
75 g ............................ Granulated sugar
Meringue
1 ................................. Egg white
50 g ............................ Granulated sugar

Topping
150 g .......................... whipping cream
10 g ............................ Icing sugar
.................................... Fresh strawberries



Preheat an oven to 180C
Line 18 cm cake pan with baking paper.


Make Meringue:
Beat the egg white until foamy, add the sugar gradually, and beat until firm peaks formed.


Put into a piping bag fitted with 1- 1.2 cm nozzle.


Make cake batter:
Mix melted butter and whipping cream together, set aside.


Sift all purpose flour, almond powder and baking powder together, set aside.


Beat the egg, egg yolks, vanilla extract and salt together, until foamy.
Add the sugar gradually.


Beat until thick (ribbon stage).


Fold the flour mixture in 2 additions.


Fold the whipping cream mixture.


Fold the strawberry pieces.


Until combine.


Put into the prepared pan, smooth the top and pipe the meringue over the cake.

Bake for 10 minutes.


Reduce the temperature to 160C and bake
for 37-42 minutes more.


Let the cake cool completely before using.


Whip the whipping cream and icing sugar together until soft peaks formed.


Spoon the whipped cream over the cake and place strawberries on top.
