Raisin Bread: My simple kind of bread

This bread is so simple but I think it's the best in its own way.

 My mom bought me a large bag of raisins last week ^^", well I didn't tell her to buy it for me but she think that I might want it, haha.
So, When I have the ingredients, the best thing that I can do is using it. Making cake is not my choice because it doesn't need a lot of raisins, and the sweetness of it means no one can eat more than 1 piece. 
Baking bread is my solution, I can put a ton of raisins into 1 small loaf and when slice and toast it, this bread becomes delicious breakfast too. It's not too sweet, and you can make it more delicious by slice it into thick slice, spread the butter over it and toast it until lightly golden, serve it with a cup of coffee, it's very, very yummy!
Everything goes well according to my plan, because now we finished our first loaf and I will make another one today, and yes, I think I will use all the raisins within 2 weeks, haha.



 Raisin Bread
Make 25 x 10 cm loaf


150 g ......................... Raisins
50 ml ......................... Hot water

Dough
300 g........................... Bread flour
2 1/2 tsp ..................... Instant yeast
25 g ............................ Granulated sugar
1 tsp ............................ Salt
150 ml ......................... Water
1 .................................. Egg (about 55g)
40 g ............................. Unsalted butter, soft

..................................... Unsalted butter, for butter a bowl, place over the dough and brush the bread




 Soak the raisins with hot water for 4 hours.


 Put the flour, sugar and yeast into a bowl, whisk to combine.
Put the salt into the bowl and whisk to combine.
Pour water and egg into the bowl, mix with a spatula until combine.


 Press with your hand until a dough formed.


 Remove from the bowl, and knead until smooth.
Add the butter and knead until smooth and shiny.


 The dough is ready.


 Drain the raisins.


 Knead the raisins lightly until fully mix (use a 1- 1 1/2 tbsp of the flour to prevent the dough to stick to your hand).


 Butter a bowl, and place the dough into the bowl.
Cover and let the dough rise until double in size (about 1 hour).


 When the dough is ready, remove it from the bowl.


 Fold and shape into a rectangular shape.
Place in 25x10 cm loaf pan.


 Cover and let it rise until double in size.
Meanwhile preheat an oven to 190C.


When it's ready, cut the top of the bread and place knobs of butter over the dough.



Bake for 20-25 minutes, or until golden brown.
Remove from the oven, and brush with butter.
Let it cool before slicing.

  1. Hi, I'm Sisca from Surabaya, Indonesia. May I know the purpose of putting some knobs of butter over the dough when it's ready for baking? Just to give some rich taste on the bread?

    1. By placing the butter over the dough, the bread will crack slowly and beautifully :)

  2. can i use a breadmaker to do this bread.

    1. You can use the dough making program to knead the bread, ^^.
      I don't recommend put the raisins to knead with the dough in bread maker, it will crush the raisins, and the texture of the bread will be gummy (well I tried it before, haha ^^").

    2. Do you use bread pan to bake the bread. Or did you use breadmaker
