Red Velvet Cake with Milk buttercream

For me baking and cooking is an adventure, I love to try new recipes, ingredients, equipments or gadgets.

That's why I really love to read cookbooks, ^^ they give me a lot of new ideas. When making something, you can go for the most basic recipe to complicated one, it's your decision. So when I see this method, I think it's very easy and if it can give you delicious cake, you should try it. Just beat everything together, that's all. 
For the buttercream, you don't need to play with hot sugar syrup. It made from milk and flour, that cook until thicken. When beating the butter into the milk mixture will will split a bit but they will come together at last, ^^. 
As this cake use oil as the fat, it will stay moist after refrigerating (cake made from butter will be firm, you need to return it to the room temperature before eating). 
You can use raspberry or strawberry jam, depend on your taste.

 Red Velvet Cake with Milk buttercream
Make 18cm cake 




Red Velvet Cake

100g .................... All purpose flour
70g ...................... Cake flour
1 1/2tsp ................ Cocoa powder
1/2tsp ................... Baking soda
1/2 tsp .................. Salt
90ml ..................... Oil (I use rice bran oil)
120ml ................... Milk
80g ....................... Whipping cream
140g ..................... Granulated sugar
1 ........................... Egg
1tbsp .................... White wine vinegar
1tsp ...................... Vanilla extract 
1 1/2tsp ................ Red food colouring

Milk buttercream
240ml ................. Whole milk
190g ................... Granulated sugar
40g ..................... All purpose flour, sifted 
1tsp .................... Vanilla extract
............................ Pinch of salt
225g ................... Unsalted butter, cut into small pieces

............................ Berry jam

Preheat an oven to 180C
Line 18cm round cake pan with baking paper.
Sift all purpose flour, cake flour, cocoa powder, baking soda and salt together, set aside.



Put the rest of the ingredients into a bowl, beat to combine.
Pour half of the flour mixture into the bowl, beat to combine.
Pour the rest of the flour mixture into the bowl beat to combine.
Pour into the prepared pan.
Bake for 45-50 minutes or until the top of the cake spring back when touch lightly.
Let the cake cool completely.

Make Milk buttercream
Put milk, sugar and sifted flour into a small pan, stir to combine.
Place over low heat cook, stirring constantly, until thicken.
Pour into a bowl and let it cool completely before using.

When The milk mixture is cool, mix in the vanilla and pinch of salt.
Then mix in the butter, piece by piece. 
The mixture will split but it will be smooth at last.

Assemble
Cut the top of the cake out, you will use it for decorating.
Slice cake into 2 layers.
Place 1 layer on a plate, spread the jam over the cake.
Pipe the buttercream over the jam.
Place the other layer on top.
Cover the side and the top of the cake with buttercream.
Smooth the top and side of the cake.
Sprinkle with cake crumbs.
