Happy Birthday My Niece: Princess Cake, chocolate, vanilla and strawberry marble cake

 It's fun for me to make Birthday cake for my niece, every year, I have a plan ^^.

This year, I bought the princess doll when I went to chocolate school, I wanted to make princess cake for her (she is Disney's channel fan). It's simple cake with rolled fondant covering and decorate with royal icing.
The cake is marble, because when I asked her what flavor that she wanted she said "chocolate, vanilla and strawberry" ^^, it's easier to make only one batter and divide into different flavors hehe. The texture and taste of this cake is very good, you can pair it with different kinds of buttercream (I suggest French buttercream).

 This year is huge job for me, hehe, because she goes to school already, I had to make a lot of cake pops and cupcakes for all the students at the elementary school. You can see that I was busy lately.

 But it's fun, I rarely make a lot of cake, ^^" and working with 10 batches of buttercream is not normal. Luckily everything went smooth (the only problem was the buttercream melted a bit when my sister took the cupcakes to school). 
I started to think about next year birthday cake, it will be another fun project for me. 



Marble Princess Cake
Make 1 22cm cake (or two layers 18cm and 12cm)


 250g .............................. Unsalted butter
1tsp ................................. Vanilla extract
230g ............................... Granulated sugar
......................................... Pinch of salt
3 ...................................... Eggs
150g ................................ Cake flour
150g ................................ All purpose flour
1 1/2tsp .......................... Baking powder
180ml ............................. Milk
20ml ............................... Whipping cream
Strawberry part
......................................... Pink food coloring
1/2tsp ............................. Strawberry extract
Chocolate part
2tbsp ............................... Cocoa powder
2tbsp ............................... Milk

Preheat the oven to 180°C.
Butter and line the base of 22cm round cake pan with baking paper. 
*for my cake I use 18cm and 12cm pan.
Sift both kinds of flour, salt and baking powder together, set aside.
Mix the whipping cream with the milk.
 Beat the butter until soft and smooth, slowly add the granulated sugar and beat until fluffy, beat in the vanilla.
Beat the eggs together, pour into the butter and sugar mixture, beat until combine. 
  Add the flour mixture and milk mixture alternating by starting with the flour and end with the flour.
Divide the batter into 3 parts.
Mix 1 part of the batter with cocoa powder and milk, and the other one with strawberry extract and pink food coloring.
Spoon the mixtures into the prepared pan alternately and use a skewer to crate a marble effect.
Bake for 1 hour - 1 hour 10 minutes or until the toothpick insert in the center come out clean, and the top is spring back when touch lightly. If the top of the cake brown while baking covering with aluminium foil. 

Serving this cake with any kind of buttercream of your choice. 

For making princess cake

500g ............................... Yellow rolled fondant
......................................... Royal icing
......................................... Ganache 
......................................... Strawberry jam 

Make the Ganache

350g ................................. white chocolate, finely chopped
120ml ............................... Whipping cream 

1. To make white ganache, put the chocolate pieces in a large bowl.
2. Put the cream in a saucepan and bring to boiling point. Pour the cream over the chopped chocolate and mix with a hand whisk until the ganache is smooth. (Do not use an electric whisk, as you will create too many air bubbles in the ganache.)
3. Allow to cool completely and then leave to set overnight.

Assemble:
Cut the top of the cakes to make the top level. 
Cut the each cake into two layers, and spread the jam on top of the first layer.
Place another layer on top, frost top and side of the cake with ganache, make it as smooth as possible. Do the same for 2 cakes.
Cover both cakes with the yellow fondant.
Decorate with the royal icing.
