Happy Cooking with LG SolarDom: Chicken Biryani with green chutney

I love spices, their aroma always make me feel good ^^, and luckily that my Mom doesn't hate them anymore.


Now making this kind of food at home is allowed, hehe, actually not that she doesn't let me make it but I think if cooking something in the house, all the family members should be able to eat them. This time I try to crate the Chicken Biryani (Kao mong kai) using my LG SolarDom, I use both Microwave function and grill function. Grill function can be use instead of using the hob, but you need a heavy baking pan (or better cast iron pan) that can use under hot grill. With grill function and pan, your chicken will brown nicely ^^, anyway you don't have to worry that with short cooking time the chicken is not cooked, because it will be cook with rice at the end. 
You may think that it's hard to make this dish at home because the how to and ingredient list is quite long, but the fact is it's very easy I just do my best to show you all the step that you need to do. Actually the longest time for this dish is marinating the chicken and cooking rice ^^, your working time is about 30 minutes, that's all (and most of them is put the pan or bowl in the oven and waiting, hehe). I can't tell you exactly how many people this recipe serves because it depends on how hungry you are. 
Serve this aromatic Chicken Biryani and green chutney with cucumber and tomato, I'm sure you will think it's worth making.    



 Chicken Biryani with Green Chutney
Serve 2-3 


Chicken part

500g .................................. Chicken tights


Marinade

-1tsp .................................... Curry powder
-1/2 tsp ............................... Turmeric powder
-1/2tsp ................................ Crushed Coriander seed 
-1/4tsp ................................ Caraway seed
-1/2tsp ................................ Cinnamon powder
-2 ......................................... Dried bay leaf
-1tsp .................................... Salt
-1tbsp .................................. Granulated sugar
-1tbsp .................................. Milk
-1tbsp .................................. Whipping cream
Cooking
-1tbsp .................................. Butter
-2tbsp ................................. Shallot, finely sliced 

Rice part

210g ................................... Rice
1 1/2cup ............................ Water
1/2 tsp ............................... Curry powder
1/4 tsp ............................... Turmeric powder
1/4tsp ................................ Crushed Coriander seed 
1/8tsp ................................ Caraway seed
1/4tsp ................................ Cinnamon powder
1 ......................................... Dried bay leaf
1/2tsp ................................ Salt
1/2tbsp ............................. Granulated sugar

Fried shallot
1/8cup .............................. Shallot, finely sliced 
........................................... Oil for frying

Green Chutney

1/8 cup .............................. Spring onion, chopped
1/8 cup ............................. Coriander, chopped
1/4cup .............................. Chopped fresh ginger
1 ......................................... Cayenne pepper, seed removed
2tsp ................................... Salt
1/3cup .............................. Rice vinegar
65g .................................... Granulated sugar
1tbsp ................................. Water


Marinate the chicken:
 Mix all the ingredients and chicken together, refrigerate 4 hours or overnight.

Make the Green chutney:



Put spring onion, ginger, cayenne pepper and coriander into the food processor, set aside.
Put rice vinegar, sugar and salt in a microwavable bowl, place in the oven. Select microwave function, 900W, set timer to 1.30 minutes, then push start.
Remove from the oven and pour the spring onion mixture into the bowl, stir to combine.

Make fried shallot:

 Put the shallot in a microwavable bowl, pour enough oil until cover the shallot.


 Select microwave function, 600W, set timer to 2 minutes, then push start.
Remove the bowl from the microwave, stir, put the bowl back into the microwave, select microwave function, 600W, set timer to 1.30minutes, then push start.
Remove the bowl from the microwave, stir, put the bowl back into the microwave, select microwave function, 600W, set timer to 1.30minutes, then push start.
 Remove the fried shallot from the bowl, drain on paper towel.

Prepare the 
chicken:
 Preheat grill: Select grill function, gr-1 for 5 minutes.
Select grill function, gr-1 for 16 minutes.
Put the butter in a pan and place in the oven and grill for 1 minutes.
Put the sliced shallot in a pan and place in the oven and grill for 2 minutes.


 Cook the chicken:

 Place the chicken in a pan skin side up, and place in the oven and grill for 6 minutes.
Remove from the oven and turn the skin side down, and place in the oven and grill for 3 minutes.
 Remove the chicken from the pan.
Put the spice with sugar and salt into the pan, stir until combine, and place in the oven and grill for 2 minutes.
Stir the rice into the pan, and place in the oven and grill for 2 minutes.
 Put the rice in a microwaveable bowl, place the chicken on top of the rice, and pour the water into the bowl, cover the bowl with plastic wrap, or a cover. Put the bowl in the oven.
  Select microwave function, 600W, set timer to 25 minutes, then push start.


Remove from the oven and turn the rice to make the rice cover the chicken cover the bowl, let it rest for 5 minutes.
Serve:
Put the rice in a plate with chicken and fried shallot, serve with green chutney.

  1. Now, this looks like the kind of biryani I like! I'm intrigued by the shallots cooked in the microwave. Interesting, will have to give it a try one day! Thanks for that!
