Berry Vodka jelly: Lovely simple sweet.

First, I'm not the alcoholic, ^^, but I really love this liqueur.

I use this jelly as a part of some desserts before, I think that it will be great by itself.  Even I say that it is great by itself, I made it for accompanying my plate dessert.  But my niece enjoy it so much, and it's easy to make, may be someone will want to make it too ^^.
The taste of the  lemon flavored Smirnoff Ice® is very good, but the alcohol will prevent the jelly to set perfectly, so warm it again until almost boiled will reduce the alcohol in the mixture, but some of them is still there, hehe.
You can serve it on its own or with some rich mousse or cheese cake, the tangy sweet of it will cut down the richness of it, the result is you will be able to enjoy the cake more, haha.



 Berry Vodka jelly 
Makes 15 pieces

150g ................................ Frozen berries (mixed)
110g ................................. Raspberry puree 
130g .................................. Smirnoff Ice®
140g .................................. Superfine sugar
50g .................................... Water
8.7g .................................... Gelatin leaf 



Bloom the gelatin in cold water.
Mix the raspberry puree and water with the sugar.
Warm the puree mixture in the microwave and put the gelatin into the mixture, stir to combine.

 Pour the Smirnoff Ice® into the raspberry mixture. Warm in the microwave again until almost boiled, the mixture will bubble, let it rest a bit. 

Pour the mixture into the rose pattern silicone mold, just 1/3 of the molds. Frozen for 1 hour.
Place the frozen berries over the jelly and pour the rest of the jelly mixture to cover the fruits.
Put in the freezer for 4-6 hours.

To serve:
1 hour before serving take push the jelly out of the molds and place them on the serving plate, let it soften in refrigerator.

  4. Hi i'm inspired always by your bakes especially creative. Just a question, beside using Smirnoff Ice what can i replace with.. find it quite hard for me to get it in Singapore?
