Vanilla Almond Cake: Light and delicious cake

Is there anything for me? My sister asked me, well I didn't bake much lately, and our home is short on dessert or sweet.

So, I think that I have to make something quick (and delicious) for her ^^. A simple cake that rich with flavor in itself, and you don't need any frosting.
The making method is similar to sponge cake but the ratio of the ingredients is closer to the pound cake. Start by whipping the eggs until light in color, you will add a lot of air into the batter, then fold the flour and melted butter into the whipped eggs. But you don't have to worry about folding and loss air, the additional baking powder will help to expend the air pocket that we already created. Because of this reason, when putting the batter into the cup, add it until 3/4 cup is enough, more than that the batter will flow over the tins.
This cake is not too rich, I think it's great for eating with a cup of tea as a light afternoon treat ^^, well, because it's light, you might need 1 more, haha.

Vanilla Almond Cake
Make 8-9 standard muffin tins

2 .................................... Eggs (large)
100g .............................. Sugar
1tsp ................................ Vanilla bean paste
......................................... A pinch of salt
1tsp ................................ Vanilla extract
50g ................................. Almond powder
80g ................................. Cake flour
2/3tsp ............................ Baking powder
70g .................................. Melted butter
35g .................................. Sliced almond 

Preheat the oven to 170°C. 
Line the tins with paper cups.
Sift the flour and baking powder together, set aside.

 Whisk the eggs, salt and Vanilla bean paste until lighten add the sugar gradually until very light in color (don't have to be ribbon stage). Mix in the vanilla extract.
Fold the almond powder and flour into the eggs mixture.
Fold in the melted butter.
Spoon into the prepared tins, and sprinkle with sliced almond.
Bake for 20-25 minutes, or until the cake spring back when touch lightly.

  2. if i don't hv vanilla paste, can i use 2 tsp of vanilla essence (Nigel Massey) instead? Tks for yr advice.

  3. Yes you can use more vanilla essence ^^, or use seeds from vanilla bean too.

    Can I use normal flour instead of cake flour to bake this ? If yes, do I need to add anything else. Please advise.

    You can use plain flour, but substitute 5 g of it with corn flour.
