I think the hardest part of this recipe is waiting ^^, as you know that meringue needs a lot of time to dry in the oven.

Apple Crumble Sponge: Turn to me when you need comfort.
I just made it last night, with a feeling that I really needed something to comfort me. Well there are so many times in life that everything around us, is not in the way that we want ^^", and for me when I'm facing that's situation, I want a comfort food.

Summer Nectarine Cakes : Great for lazy day !
Because I didn’t have a lot of time lately (almost everyday I went to the mall with my sisters, last week), I was tried. But I couldn’t stop baking and all I want is an easiest recipe which I don’t have to do anything more than mix and pour (yes, this one is the easy and yummy recipe, that I use very little time for mixing, about 5 minutes).

The recipe is from.......... I always place this book near my bed, haha, I think it’s a beautiful cookbook and the recipe are very simple and easy as the name of the book.
Nectarine is one of my favorite fruits and when turns it in to this cake the flavor of sweet fruit goes very well with the lightly sweet almond base cake.
So, take all the ingredients out of the fridge and you will have a lovely little cake to enjoy in less than 30 minutes.
Summer Nectarine Cakes
Makes 12

3 | egg whites |
1 cup (110g/3¾ oz) | almond meal (ground almonds) |
½ cup (75g/ ⅔ oz) | icing (confectioner’s) sugar, sifted |
¼ cup (40g/ ½ oz) | self-raising (self-rising) flour or cake flour with ¼ tsp of baking powder |
50g (1¾ oz) | butter, melted |
1 tablespoon | finely grated lemon rind |
1 | large nectarine, halved and thinly sliced |
Preheat the oven to 180°C (350°F).
Place egg whites, almond meal, sugar, flour, butter and lemon rind in a bowl and mix to combine.
Spoon the mixture into 12 lightly greased ¼ cup (60ml / 2 floz) capacity patty tins and top with a slice of nectarine.
Bake for 15 minutes (I bake for 20 minutes) or until puffed and golden.
