Because I rearranged my room and my bookshelves (I wanted to give some of my books to the library). First I thought that I will have more space as my plan was to give most of my old cookbooks. But when I opened and read it again, I found that I still love it, haha, anyway, I tried not to keep all of them.
I really love to read, and after using Kindle, when I saw that I read 600+ books (plus manga), in 10 months, I was surprised ^^.
OK, talking about cookbooks again.
I have too many cookbooks (in many languages) when I started baking and cooking, most of them are basic recipes (or a book with a load of recipes) as I didn't have any fundamental knowledge. But now, what I want from the book is not the recipe, but an idea and inspiration. When I saw an interesting recipe, I took the idea and used my beloved recipe instead.
Today is another lovely idea from my old cookbook, that I adapted to suit my taste. As I love the apple to be soft so I cooked it a bit before adding it into the dough. But you can skip this step if you don't mind about it.
This scone is not too rich and it will go very well with butter and cream (and don't forget a cup of tea).
Recipe: Apple scones

Apple Scones
Makes 6 pieces
Apple
70 g ................... Apple (peeled and cored)
1 tsp ................... Granulated sugar
Scone dough
200 g .................. All-purpose flour
1/8 tsp ................ Salt
1 tbsp .................. Baking powder
45 g ..................... Granulated sugar
25 g ..................... Unsalted butter (Cut into 1.5 cm cubes)
35 g ..................... Whipping cream
50 g .................... Milk
25 g ..................... Egg
Finishing
1 ...................... Egg yolk
......................... Sugar
Cut the apple into 1 cm pieces.
Mix the apple pieces with 1 tsp of sugar.
Cover and heat in the microwave (at 600w) for 1 minute.
Let it cool completely before using.
Sift the all-purpose flour, baking powder, and salt into a bowl.
Pour the sugar into the bowl and stir to combine.
Put the butter into the bowl and mix with your fingertips.
Mix until the mixture is sandy.
Mix the whipping cream, milk, and egg together.
Put the apple pieces and cream mixture into the bowl.
Remove from the bowl.
Press the dough lightly and fold it 6-8 times.
Form into a 15x10 cm. blog.
Cover and refrigerate for 1 hour.
Before baking preheats an oven to 230℃.
Cut the dough into 6 pieces.
Place the dough on a baking sheet, brush with egg yolk and sprinkle the sugar over the top.
Bake for 13 minutes.
