Because this time, instead of butter, we use mascarpone cheese, with a lightly sweet taste and milky fragrance, we got delicious creamy sandwich bread. You can eat it on its own or toast it and spread it with salted butter, it's sooooo good.
I bake bread more often lately after buying a new oven. It's a small oven (only 30 liters) but the function that I love most is the steam mode. One of my dreams is I want to make delicious hard-crust bread at home, and the steam is so important. I know that baking with cast iron pans is a good option but I really want to make different types and shapes of bread, so I decided to buy it.
Well, you may want to ask what my new oven relates to bread making. It's because this oven comes with a ferment function, with this function, we can ferment the bread dough by putting the dough in the oven, and setting the temperature and time. With this function, it's easier for me to control the time and result (the temperature in my kitchen is about 26-28℃).
Especially when making bread with a small amount of yeast we need more time to rise, and this recipe is one of them. You can see that we use only 1/2 tsp of yeast for 250 g of flour (most of the recipes will call for 1 tsp) so the fermentation is longer.
I set the temperature to 30℃ and use 90 minutes for the first rise, you can stick tape on the side of the bowl (the way I do), it will be easier to see when the bread becomes double in size.
Anyway, if the temperature in your kitchen is higher than 30℃ the time will be shorter.

Creamy Cheese Sandwich bread
18.5 x 9.5 x 9 cm. loaf pan
250 g ...................... Bread Flour
1/2 tsp ..................... Instant yeast
5 g .......................... Salt
180 g ....................... Milk
12 g ......................... Honey
40 g ......................... Mascarpone cheese
Put the bread flour and instant yeast into a bowl.
Whisk to combine. Add the salt and whisk to combine.
Pour the milk and honey into the bowl, and mix until fully combined.
Or until the dough passed the windowpane test.
Put the Mascarpone cheese into the dough.
And roll each piece into a ball.
Cover and rest before shaping for 15 minutes.
Put the dough into the prepared pan.
Cover and let it rise for 60-70 minutes at 28-30℃
Before baking, preheat an oven to 190℃. Using upper and lower heat.
