As I try to grade the color and adjust light (but I know that I still have a lot to learn), and for 7 minutes video, I used many hours to edit it.
Last week, I spent most of my time in the kitchen, baking a lot of scones, shortbread, lemon cake, banana cake, madeleine and etc. As friends of my brother came to visit us. It is the first time since Covid that I had a chance to see them.
So I didn't have time to post this delicious tart.
This tart is a combination of yummy things, almond cream, apple, crumble, and custard sauce!
You can see that the recipe is quite long but all of them are very easy to make. You can prepare them ahead of time (except the apple) and put them all together when you want to bake.
If you don't want to make the custard sauce, vanilla ice cream is another good option to serve with this tart.
Apple crumble tart
Makes 22 cm tart
2 .......................... Apples
1 tbsp .................. Granulated sugar
1/2 tsp ................. Vanilla extract
Tart pastry
100 g .................... Unsalted butter (Room temperature)
1/2 tsp .................. Vanilla extract
1/4 tsp .................. Salt
70 g ...................... Granulated sugar
1/2 ........................ Egg (25 g)
170 g ..................... Cake flour
30 g ...................... Almond powder
Crumble
180 g ..................... Cake flour
40 g ....................... Granulated sugar
40 g ....................... Brown sugar
1/4 tsp ................... Salt
75 g ....................... Unsalted butter (Cut into 1.5 cm cubes)
Almond cream
70 g ....................... Unsalted butter (Room temperature)
70 g ....................... Granulated sugar
1 ............................. Egg (55 g)
1 tbsp ..................... Rum
90 g ...................... Almond powder
2 tbsp ................... Cake flour
Put the butter, salt, and vanilla into a bowl and mix to combine.
Pour the granulated sugar into the bowl and mix to combine.
Put the egg into the bowl and mix to combine.
Put the flour and almond powder into the bowl.
Mix until moistened.
Remove from the bowl and press the pastry with the palm of your hand. Until smooth.
Cover and refrigerate for at least 1 hour.
Core and slice the apples.
Put into a microwavable bowl with sugar and vanilla.
Heat in a microwave (600W) for 2 minutes.
Let it cool completely before using.
Roll the pastry with a rolling pin.
Into a 29 cm round.
Brush a 22x3 cm. pan with butter.
Line the prepared pan with the pastry.
Cut the side pastry to fit the pan.
Prick the base of the pastry with a fork.
Refrigerate for 30 minutes.
Put the flour, sugar, brown sugar, and salt into a bowl. Whisk to combine.
Put the butter into the bowl and mix with your fingertips.
Mix until the mixture looks like moist breadcrumbs. Keep the crumble mixture in the fridge until ready to use.
Beat the butter until smooth, add the granulated sugar, and beat to combine.
Put the egg and rum into the bowl and beat until combined.
Put the almond powder and flour into the bowl.
Mix until combined.
Spread the almond cream over the tart pastry.
Line the apple pieces over the almond cream.
Sprinkle the crumble mixture over the apple pieces.
Bake in 180℃ Preheated oven for 50-60 minutes.
Easy Vanilla sauce
1 .......................... Egg
............................. Pinch of salt
3 tbsp .................. Granulated sugar
3 tbsp .................. Granulated sugar
1 tbsp ................... All-purpose flour
1/4 tsp ................. Cornstarch
1/2 tsp .................. Vanilla extract or Vanilla bean paste
250 g ................... Milk
1/4 tsp ................. Cornstarch
1/2 tsp .................. Vanilla extract or Vanilla bean paste
250 g ................... Milk
30 g ..................... Unsalted butter
Heat the milk in a microwave (600W) for 2 minutes.
Put the egg, salt, vanilla, and sugar into a saucepan and whisk to combine.
Sift the cornstarch and flour into the saucepan and whisk to combine.
Pour the hot milk into the saucepan and whisk to combine.
Place over low heat (whisk constantly)
Cook until slightly thicken.
Pass through a sieve into a bowl.
Put the butter into the bowl and whisk slowly to combine.
