With basic ingredients butter, egg, flour, and sugar, we can make a very delicious cake! I think that the person who invented pound cake is a genius ^^.
Now, from the basic recipe, we can create any type of cake that different in texture and taste. And with a bit of baking powder, we can spend less time beating the butter and sugar too.
For this recipe, you can see that the weight of the ingredients is not equal, esp. the butter and egg. I really recommend weighting the egg as more egg your cake won't be delicious dense (from butter).
If you want the top of your cake to crack in the center, cut the top of the in the center after baking for 15-20 minutes. Anyway, the cake will crack freely if you don't cut it, haha, so this step is not necessary.
Pound cake will be richer if you warp it and keep it overnight before eating, but I rarely have a chance to keep it as the lovely buttery fragrance is too tempting for me ^^.
Butter rich pound cake
17.7 x 8.6 x 6 cm. Pan
110 g ................... Cake flour
2 g ....................... Baking powder
115g ..................... Unsalted butter, (Room temperature)
1/2 tsp ................. Vanilla extract
1/8 tsp ................. Salt
100 g .................... Granulated sugar
100 g ..................... Egg (About 2 smalls)
Line 17.7 x 8.6 x 6 cm. Pan with baking paper
Let the cake cool in the pan for 10 minutes.
Sift the flour and baking powder together, set aside.
Put the butter, vanilla, and salt into a bowl.
Beat until smooth, add the granulated sugar, and beat until fluffy and light in color.
Put the eggs into the bowl.
Beat to combine.
Pour the sifted flour into the bowl.
Fold to combine.
Put the cake batter into the prepared pan and smooth the top.
Bake in 170℃ Preheated oven for 50 minutes.
