I have to stay away from chocolate for once in a while. But I didn't stay away from the kitchen ^^, and today I made a simple bread that everyone can enjoy. Damper is one kind of traditional Australian soda bread that usually baked in the coals of a campfire or in a camp oven, but it can be bake in house oven too.
As it's a kind of soda bread, it's quick (no need to wait for the yeast to rise), and by using both whole wheat and cake flour, you don't have to be afraid that the bread will be tough (cake flour is low in gluten). Serve it as a side or by itself with load of butter is the best way to enjoy this chewy delicious bread.

Walnut Damper Bread
Makes 4 pieces
150 g .............................. Whole wheat flour
250 g .............................. Cake flour
1 1/2 tbsp ....................... Baking powder
1 tsp ............................... Salt
230 g .............................. Milk
80 g ................................ Unsalted butter, soft
60 g ................................ Walnut, chopped
........................................ Unsalted butter, for topping
Preheat an oven to 200C
Line a baking sheet with baking paper.
Put both kinds of flour, baking powder, and salt into a bowl.
Whisk to combine.
Pour the milk into the bowl.
Stir until fully moist.
Knead the butter into the dough.
Knead until combine.
Remove from the bowl and knead for 2-3 minutes.
Knead walnut into the dough.
Knead about 2-3 minutes.
Cut into 4 equal pieces.
Roll each piece into a ball.
Cut the top of each dough and place the butter into the centre.
Bake for 30 minutes or until golden brown.
Serve with load of butter and enjoy!
