I love Tiramisu ^^. You can find many recipes for Tiramisu in my blog, but today I think I want to make different kind of Tiramisu. Most of the time Tiramisu is dressed up for grown ups, because it contains a lot of alcohol. So, how can I make it more childish, haha. Then I think about Oreo, I didn't use it much lately and I miss it. Plus the taste of the Oreo can go well with sweet Mascarpone cheese and coffee. With filling, it comes with bitter and sweetness, when without filling it give intense chocolate flavour. I divide the Oreo into 2 parts, the first part comes with the filling to mix into the cheese mixture, it adds both chocolate taste and sweetness. The second part that used for sprinkle on top of the cake, is without the filling, used instead of cocoa powder or chocolate. For the topping, if you want it to be crunchy sprinkle it just before serving.
This cake is very delicious (well, in my opinion, haha), the cheese mousse is so light that you will finish it quicker than you think, serve it with a cup of coffee is recommended.
Oreo Tiramisu cake
Makes 15x15 cm cake
Cream
350g ............................................. Mascarpone cheese
3 .................................................... Egg yolks
3 .................................................... Egg whites
50g ................................................ Granulated sugar (A)
25g ................................................ Granulated sugar (B)
6g .................................................. Gelatin leaf
25g ................................................ Whipping cream
10ml ............................................. Kahlua
50g ................................................ Oreo, (with filling) chopped
Syrup
30ml ............................................. Kahlua
80ml ............................................. Coffee
1 recipe ......................................... Basic Genoise
50g ................................................ Oreo, (without filling) chopped
Bloom the gelatin leaves in cold water for 5 minutes.
Put whipping cream in microwavable cup, warm in the microwave for 20 seconds (600w), put the softened gelatin leaves in the whipping cream cup, warm in the microwave again for 10 seconds (600w). Remove from the microwave and stir until fully combine.
Put Mascarpone cheese, egg yolks and granulated sugar (A) into the bowl, mix with spatula.
Pour the whipping cream mixture into the bowl, whisk to combine.
Add the Kahlua and whisk to combine.
Whip the egg whites with granulated sugar (B) until firm peaks form.
Fold the meringue into the cheese mixture in 3 additions, add the chopped Oreo in the last addition.
Make the syrup by mix the Kahlua and coffee together.
Cut the genoise into 2 15x15cm pieces.
Place 1 piece of genoise into the pan, sprinkle with coffee syrup, spoon half of the cheese mixture into the pan.
Place another piece of the genoise, sprinkle with coffee syrup, spoon the rest of the cheese mixture into the pan.
Cover with plastic wrap, refrigerate until firm (at least 4 hours).
Sprinkle the chopped Oreo over the cake, press lightly and refrigerate for 10 minutes before serving.

ReplyDeleteI always have trouble with mascarpone cheese. I get the recipe from Joy of baking. When mix the chees to the egg york, it turns out smooth at first, then it get lump in the mixer. I dont know what gone wrong. It happens several times. Can you show me the step to prepare the cheese before mixing it? Thank you so much

ReplyDeleteMascarpone separates easily, so it's better to use a spatula to soften it, than whisk it, when it soft enough press it until combine ^^.
I love tiramisu too! I also love how you used Mascarpone cheese and Oreos. Those two are practically my favorite things to indulge on and you've combined them effortlessly with that recipe. The pictures look mouthwatering, BTW! Thank you so much for sharing!
