Banana Custard Pie: For happy little kid in me

 Banana and custard, you can be sure that it will be delicious every times that they are together.

I think it has an image of children's dessert, hehe, so I fell like a little kid each time that I eat it. This time, they come together in a form of pie, and it is very easy to make (Ok, I use word "easy" a lot on my blog, because that what I love my baking to be ^^).  The base is Oreo cookies with pecan nut, actually you can use other kinds of nut too, but for me a slightly bitterness from pecan is what I love. You need to bake it just to set them together, and after this stage no oven needed.
The custard in this recipe set with gelatin and cornstarch, using cornstarch has other benefit than setting the custard, it reduces the chance of the custard to become a scramble egg too ^^.  For the topping, if you love a lot of whipped cream you can go for it by increase the amount of the whipping cream to 250-300 g and icing sugar will be 25-30 g , and the topping will be sky high.
This pie is great when it cool from the fridge, I suggest put it in the plate and eat it while watching animate, you will be a happy kid like me, haha.
   

 Banana Custard Pie
Makes 22 cm pie

Base
130g .......................... Oreo cookies (cream removed)
30g ............................ Pecan nuts
2tbsp ......................... Granulated sugar
80g ........................... Melted butter
Filling
1 1/2 tbsp .................. Water
3/4tsp ....................... Gelatin powder
3 ............................... Egg yolks (medium size)
65g ........................... Granulated sugar
25g ........................... Corn starch
.................................. Pinch of salt
330ml ....................... Milk
1tbsp ......................... Butter
1/2tsp ........................ Vanilla bean paste
1 1/2-2 ....................... Banana, cut in to slices
Topping
200g .......................... Whipping cream
20g ............................ Icing sugar
................................... Dark chocolate curls 

Preheat the oven 180°C
Brush the pie pan with butter.
 Process the cookies and pecan nut in the food processor until fine, then mix with the sugar and melted butter.
Press into the prepared pan. Bake for 10 minutes.
Pour the gelatin powder into the water.
Mix the yolks, vanilla bean paste, salt, sugar and cornstarch together in a saucepan. Boil the milk by heating in the microwave for 2 minutes. Pour the milk slowly in the yolks mixture, whisk all the time until fully combine.
Put the pan over low heat whisk all the time and heat until boil, then remove from the heat and stir in the gelatin. Mix in the butter. Meanwhile arrange the banana slices in the prepared pan. Pour the custard over the banana and place the plastic warp directly on top of the custard.
Let the custard cool, then refrigerate for 4 hours or overnight.
Whip the whipping cream with the icing sugar until soft peak formed and spread over the top of the custard, and sprinkle with chocolate curls.
