Cooking for one: Tan Tan Udon

 I love to cook for myself, it's fun to playing with all the ingredients and don't have to worry about what other people think, haha.

 Cooking for one means you can do whatever you want and you still have great meal even you are alone, hehe. Anyway, it doesn't mean that you can't cook this menu for family member ^^ just adding up the amount that fits for your family.
This dish contains three parts, stir fried miso pork, soup and udon. Most of the taste comes from the miso pork so if you taste it before adding to the soup it has to be salty (or the flavor of the dish will be bland). Boiling the soup until just simmering then turn of the heat, too much boiling can make the milk separate from the water and the soup will be thick (anyway, if it happen, you still can eat it, ^^ but it's not look as good as it should, that's all). 
Actually you can choose other kinds of noodle to suite your taste, ramen is a great choice too. 

 Tan Tan Udon
Serve 1


Miso pork
 3cm .......................... ねぎ (negi), (Welsh onion, or you can use 1tbsp of spring onion)
60g ........................... Minced pork
1/2tbsp ..................... Miso
1/4tsp........................ 豆板醤(Doubanjiang)
2tsp ........................... Shoyu (Japanese soy sauce)*
1tbsp ......................... Granulated sugar
* Add more if you like it to be salty

Soup
1/2tsp ....................... Chicken stock powder 
2tbsp ........................ Japanese sesame dressing
.................................. A pinch of salt
200ml ....................... Water
50ml ......................... Milk

For serving
200g ......................... Udon
.................................. Chili oil 
.................................. Finely chopped spring onion
.................................. Roasted white sesame


Japanese sesame dressing

Put a pan over medium heat, pour 1tbsp of oil into the pan. Stir fry the negi until soften, add the minced pork and the rest of the ingredients, fry until cooked through. Set aside.
Cook the udon, follow the package instruction, then put in a bowl.
Put all the ingredients for the soup in the pan and bring to boil, then pour the soup over the udon.
Top with miso pork, spring onion, roasted sesame and a few drop of chili oil.
