Happy Cooking with LG SolarDom: Caramel Pecan Bread Pudding

 I have been wondered about the Speed combi function for a long time, well cooking with convection and microwave for the same time is amazing.


 I once read that cooking with this method, you can save cooking time by half, because the microwave cook inside while the convection function give a crispy touch. For LG SolarDom there are 5 Speed combi modes and 3 level of microwave power (180W, 360W and 600W). This time I use co-5 which is convection +microwave power. The microwave power is great for using with this dessert as it makes egg set quicker, mostly you will need 25-35 minutes for this bread pudding to cook perfectly, with this Speed combi function I use only 13 minutes to cook mine, hehe, very quick, right?
Only the resting time is the longest process for this pudding ^^, as you need bread slices to be soaked with egg and milk mixture, so you need at least 2 hours. But you can prepare it ahead of time, because the baking time is very short! You can make bread pudding and refrigerate, bake before serving it. 
Serve the bread pudding with vanilla ice cream is very recommended, imagine the hot bread pudding and cold ice cream, wow, I know you will love it. 



Caramel Pecan Bread Pudding
Serves 4

 120g .......................... Brown sugar
65g ............................. Butter, cut into small pieces
1tbsp ........................... Light corn syrup, or honey
60g ............................. Pecan
8 ................................. French bread (About 1.5 cm thickness)
3 ................................. Eggs
280ml ........................ Milk
1/2tsp ......................... Vanilla extract
Topping
1tbsp .......................... Granulated sugar
3/4tsp ........................ Cinnamon powder
.................................... a pinch of Nutmeg
For serving
.................................... Vanilla ice cream
.................................... Caramel sauce or maple syrup


Select Convection function and set the temperature to 180°C, preheat the oven for 10 minutes.
Put the pecan on a baking tray, and put in the oven. Select Convection function and set the temperature to 180°C, roast pecan for 5-7 minutes or until fragrance, let them cool then chop and set aside.

Make the caramel:
 Using Microwave function.
Put the butter, brown sugar, and corn syrup in a microwavable bowl, cover it with plastic warp.
Place the bowl in the oven, select Microwave function and set power to 600W, set the timer to 1 minute.
Take the bowl out of the oven and stir, cover it with plastic warp.
Place the bowl in the oven, select Microwave function and set power to 600W, set the timer to 1.30 minute.
Take the bowl out of the oven and stir until the sugar melt.
 Pour the caramel into a baking dish (1.5 L capacity), sprinkle half of the pecan over the caramel.
Place the bread slices in 1 layer, and sprinkle the rest of the pecan over the bread, then top with the rest of the bread slices.
 Mix the eggs, milk, and vanilla extract together then pour the mixture over the breads.
Cover with plastic warp and let it rest for 2 hours or overnight.
 When ready to bake, mix together sugar, cinnamon and nutmeg, then sprinkle over the bread.
 Select Convection function and set the temperature to 180°C, preheat the oven for 10 minutes.
Put the baking dish in the oven using high rack.
Then select the Speed combi function, select co-5, set the temperature to 180°C, microwave power 360W and the timer for 15 minutes.
Bake for 13-15 minutes or until the bread pudding bubble. 
Let the pudding set for 10 minutes, then turn it upside down on a plate. Cut into pieces, you can serve them with ice cream or on its own (with or without Caramel sauce, or maple syrup,^^).
