Chocolate comes in many forms, you can have deep dark chocolate cakes, or the sweetest one, it can be sophisticated or cute, and today it comes in super cute form. The rocky road brownie is on a stick! But you have it all, the delicious dark chocolate base brownie, the nuts and the marshmallow ^^.
The base for the pop is very moist so you need to refrigerate it or it will be soften easily, but from the fact that you need to refrigerate it, it's easier to cover it with real chocolate. I use 60% dark chocolate for covering the pops, but you can choose other percentage of chocolate, it depends on your taste.
I think that rather than keeping, the brownie pops would be a great gift to give your friends, 15 pieces is too much to eat alone, haha.
Rocky road brownie pops
Makes 15
55g ................................. Cake flour
1/4tsp ............................ Baking powder
20g ................................. Cocoa powder
100g ............................... Granulated sugar
60ml ............................... Water
40g ................................. Unsalted butter
65g ................................. Dark chocolate (60%)
1/8tsp ............................ Salt
1 ...................................... Egg
1/2tsp ............................ Vanilla extract
Making cake pops
Buttercream
40g ................................. Unsalted butter, soft
65g ................................. Icing sugar
1tbsp .............................. Cocoa powder
1tbsp .............................. Whipping cream
Filling
......................................... Mini marshmallows
15 ................................... Lollipop sticks
250g ............................... Dark chocolate, melted
80g ................................. Finely chopped walnuts
Preheat the oven to 180°C
Line 18cm round cake pan with baking paper.
Sift cake flour, cocoa powder and baking powder together.
Melt the chocolate by putting in a bowl and place the bowl over a bowl of hot water (don't let the water touch the bottom of the chocolate bowl), stir until melt.
Put the water and sugar into the saucepan, place over medium heat until boil and the sugar melt. Remove from the heat.
Put the butter and melted chocolate into the pan, stir until combine.
Let it cool for 15 minutes.
Pour the egg, and vanilla extract into the pan, stir to combine. Add the flour mixture, stir until combine.
Pour into the prepared pan and bake for 20-25 minutes or until the top spring back when press lightly.
Let it cool completely, then finely crumb the brownie.
Beat all the ingredients for the buttercream together until combine, pour the crumbs into the bowl, use your hands to mix it well.
Divide into 15 pieces (30g/each), push the marshmallow into the ball and roll to enclose, refrigerate for 30 minutes.
