Chicken farm bakers' project: Banana and caramelized white chocolate freckles ice cream

Chicken farm bakers' project is coming back !!!!!!!!!! ^^, well I'm so happy to post the project again.

Last year all the members are busy and they kept skipping, haha, but this month we tried our best to make it again.
As I told you that the weather in Thailand is too hot, so we decided to make the ice cream. I love making ice cream, it's easy and there are a lot of flavors that you can make. This time, I combine both of my favorite flavors together, the banana and caramel. But it's not a simple caramel, it made from white chocolate ^^, by putting the white chocolate into the pan with coconut oil, place over heat and it will turn into delicious caramel freckles. 
The sweetness of the banana can be varied so you will need more or less of the sugar, and it's the most important point when you want to make delicious ice cream. 
I serve mine with caramelized banana, but you can serve it plain or eat it straight from the box, it will be delicious anyway, haha.  

Banana and caramelized white chocolate freckles ice cream
Make 1.5 litres


Caramelized white chocolate freckles
170g ............................... White chocolate
35ml ............................... Refined coconut oil

Banana ice cream base
500ml ............................ Whole milk
4tsp ................................ Cornstarch 
40g ................................. Cream cheese
1/8tsp ............................ Salt
280ml ............................ Whipping cream
110-130g ...................... Granulated sugar
2tbsp .............................. Light corn syrup
1 ...................................... Vanilla bean
2 ...................................... Bananas, ripe

Put the white chocolate and coconut oil into the saucepan and place over low heat, heat until the white chocolate turn into light brown.
Let it cool completely.
 Whisk the cream cheese in a medium bowl until smooth.



Mix 2tbsp of milk with cornstarch in a small bowl to make a smooth slurry.
Fill a large bowl with ice and water.
Combine the remaining milk, seeds from the vanilla bean, the cream, sugar, and corn syrup in a saucepan, bring to a rolling boil over medium high heat, and let it boil for 2-3 minutes.
Remove from the heat and gradually whisk in the cornstarch mixture.
Return the mixture to a boil over medium high heat and cook and stirring about 1 minutes. Remove from the heat.

 Gradually whisk the hot milk mixture into the cream cheese until smooth.
Puree the bananas until smooth and add it into the ice cream base.
Let the mixture cool completely over the bowl of ice and water.
Refrigerate overnight.
Churn the ice cream base in the ice cream machine, and pour the caramelized white chocolate freckles into the ice cream , and churn until smooth.
