When adding some fruits into the cheesecake, they make cheesecake more interesting and the taste of the fruits help reduce the heaviness from the cake too.
This cheesecake is very easy and very delicious, hehe, the strawberry sauce is not fully mix into the cheesecake so you will taste both the richness of the cheesecake and the sweetness of the strawberry at the same time.
One of the most important thing for baking good cheesecake is not to overbake it. The cake will be fully cook while cooling, so don't make a mistake by baking it until fully set from the oven or your cake will be dry and crack.

Strawberry cheesecake
Make 16 cm cake
Base
110g ................................ Digestive biscuits
50g .................................. Unsalted butter, melted
Strawberry sauce
100g ................................ Fresh strawberries
40g ................................... Granulated sugar
1tbsp ................................ Water
Cheese cake
300g ................................ Cream cheese
50g .................................. Granulated sugar
1 ....................................... Egg
Topping
70g .................................. Mascarpone cheese
50g .................................. Icing sugar
70g .................................. Whipping cream
50g .................................. Fresh strawberries
Preheat the oven to 170°C
Have ready 16 cm pan with removable base and 1 square pan.
Put the strawberries, water and sugar into a saucepan, put over low heat, let it boil until the strawberries are soften, and the sauce is thicken. Let it cool completely.
Place the digestive biscuits in a plastic bag and crush it with a rolling pin. Mix the biscuit crumbs with the melted butter, pour into the pan, pressing them into the base of the pan.
Refrigerate for 20-30 minutes or until set.
Beat the cream cheese over a bowl of warm water until soften, take the bowl out of the bowl of warm water and mix it with the sugar.
Put the egg into the bowl and beat to combine.
Pour the strawberry sauce into the bowl mix to crate a marble effect.
Pour the batter into the prepared pan and pour hot water into the square pan.
Bake for 20-25 minutes or until the outside of the cake start to set but the center is slightly wobble.
Take the pan out of the square pan and let it cool completely.
Beat all the ingredients for the topping together until soft peaks formed.
Spread over the cheesecake, and refrigerate overnight.
Place the fresh strawberries over the cake before serving.

It's not soft, what kind of the cream cheese that you use, I use the regular one, not low fat.
